Perfect Crab Cakes With Green Onions

A really easy recipe. I made mine with tofu "crab" meat, skipped the milk, and used Ritz crackers b/c that's what I had on hand. A huge HUGE hit with the husband.

Cuban Picadillo

A really interesting flavor - don't omit the raisins. Great for converting to vegetarian (with fake meat). I didn't find it saucy enough for the rice (probably b/c no hamburger fat).

Chocolate Zucchini Cake III

Did 1/2 wheat and 1/2 white flour, and 1/2 oil 1/2 applesauce, added chocolate chips and sliced almonds, topped with cream cheese frosting. A very easy cake, very moist. Nice with the additions to add some interest. I squeezed the water out of the zucchini and that probably helped keep it from being too soggy. Nice!
