Rempel Family Meatloaf

Very tasty meatloaf. I've bene making meatloaf for yesrs & years, but this made for a nice change. I loved the idea of adding the Ritz crackers, and will most likely add more the next time I make this. And if the family has their way, I'll be making my meatloaf based on this recipe from now on lol. I don't much care for steak sauce, but dh loved the extra "oomph" of flavor.

Becky's Chicken Salad

This is the perfect, simple chicken salad with a twist! I added a few of my own ingredients (green onions- which I feel MADE this recipe much, much better), but stayed with the basic recipe. They only thing I omitted was fresh parsley, only because I didn't have any. I added dried parsley into the mayo mixture, with some cayenne pepper. I made only 1/2 recpie for the 'dressing' part and the salad was perfect! Not too wet, not too dry. I poached chicken breasts in chicken stock, chopped onions & carrots, only because I needed to get rid of them. I'll be making this for a long time to come. Word to the wise: the recipe calls for HEAVY WHIPPING CREAM, not whipped cream or cool whip. EDIT: I've made this a 2nd time, didn't have green onions and it made a huge difference; still good, but a bit bland. I definitely won't make this again without them.

Artichoke & Spinach Dip Restaurant Style

This was sooooo good! I made as is, but didn't layer it, just mixed it all together & it was absolutely fantastic!! I've tried many,many artichoke/spinach dip recipes from this site & this is the keeper!!

Antipasto Squares

This always is a hit at parties. I bake the bottom crust as recommended by others and dry off the peppers to keep everything from getting too soggy. The combo of flavors is fantastic!

Bacon Wrapped Smokies

These went over like WILDFIRE! Disappeared in no time at all. I've made several times, once I tried shaking the wrapped smokie in a ziploc with the brown sugar, coating the entire thing rather than just sprinkling over the top. The bottoms were burned and crusted with all the excess brown sugar. I'm definitely sticking to the original recipe. I bake these on a jelly roll pan covered with parchment paper to prevent the sticking & they turn out perfect!

Broiled Tilapia Parmesan

Incredibly easy recipe!! I added a couple shakes of paprika & red pepper flakes, sprinkled some toasted bread crumbs on top of the filets before broiling the last time and omitted the lemon juice. All else was as stated in the recipe. This was far too good for something so easy to make!! Next time I plan on using lo-fat mayo & less butter to lower the calories. I can't imagine it affecting the flavor whatsoever. I think I may use this for chicken too

Awesome Sausage, Apple and Cranberry Stuffing

This was fantastic! I made this for Christmas dinner with turkey and prime rib and everyone raved over it. I didn't cook it inside the bird though, and even though I added more broth as recommended by many reviewers, it was still a tad dry. Not so much dry as it wouldn't bind together. Next time, I'll add more broth & maybe an egg or two to bind it together... but I'll definitely be making it again!

Jalapeno Popper Spread

Utterly fantastic! Tastes just like a cream-cheese popper. I bake mine @ 350 for 25 minutes or so which tasted better than microwave to me. This is one of those appetizer dips I am repeatedly asked to bring to the party~

Caramel Apple Pork Chops

One of the best pork dishes I've made to date!! The family loved it & have been asking for more ever since. I added sliced onions to the sauce mix which made it more savory than sweet. This recipe is now among a small group that I refuse to share with my fantastic cook of a mother in law. I now have a pork dish that tops any of hers, and I plan to keep it that way no matter how selfish lol.

Fiery Fish Tacos with Crunchy Corn Salsa

I'd actually give this 3-1/2 stars if I could. We followed the seasoning part of this recipe to the letter. The fish was so ungodly hot it ruined the flavor of everything it came in contact with! Now, I like spice. My dh LOVES spice, to the point he likes to add habaneros to alot of his meat merinades, so it isn't that we can't take the heat. There is just way too much of it. The salsa, on the other hand was fantastic. I actually added some cucumber since I couldn't get jicama, and I added some black beans & diced tomatoes since I had them on hand. The salsa was the saving grace of this recipe and is the only reason we will be making this again- without the spices on the fish. We can add our own flavor to the salso to add heat and still actually get the flavor of the fish.

Bat Cupcakes

So easy to make & what a hit at school!! I made these for my daughter's 2nd grade class party and the kids loved them. The moms wondered when I had time to do anything other than cook these but they were so simple! I used chocolate cake mix for the muffins but white/vanilla frosting so the bats stood out. The hardest part of this recipe was cutting/breaking the cookies in 1/2 and not have them be lop-sided. I went through an entire pkg of fudge stripes for just 24 cupcakes but got enough perfect 'wings' in the end. Super-yummy too :)

Anniversary Chicken I

Great combination of flavors in this! So easy to put together! I used whatever ingredients I had on hand which was pretty much what the recipe calls for but used Sweet Baby Ray's honey teriaki marinade & covered the bottom of my baking dish with it. I brushed a little bit on the chicken too, but not much. Hubby loved it and he's not a huge fan of chicken. I'll definitely be making this one over & over.

Caramel Fruit Dip

Tried this for a brunch/get together with the girls. I didn't have regular caramel topping so used what I had- butterscotch caramel topping!! It was so fantastic & tasted so much like a caramel apple I tossed in some chopped peanuts & it was like heaven! I'll be adding this to my staple appetizer list & using teh butterscotch caramel from now on.

Slow Cooker Cranberry Pork

This one's a keeper! Only changes I made were to season the roast with salt/pepper & a mix of seasonings I use on nearly every type of meat I cook. I didn't have French dressing so used Western- which is much sweeter. I added some minced garlic & used whole cranberry sauce. Hubby LOVED it as is, although next time, I plan to use the actual French dressing in the hopes that it will tame down the sweet-factor & some red pepper flakes to kick it up a notch! We've already planned to use this for our pulled pork recipe (using the jellied cranberry sauce). I see us making this often!

World's Best Lasagna

I used the sauce & ricotta chese parts of the recipe to make the baked ziti dish from this site because I didn't have any lasagna noodles on hand. Only problem was the sauce was WAY too salty!! Next time I'll 1/2 the salt- if not more- and it'll be perfect! The only reason I didn't give it 5 stars.

Cranberry Waldorf

I've made this several times and now it's the salad the family repeatedly asks me to make for big dinners, especially the holidays! I usually cut the cranberries by about 1/3 then add more apples, and I omit the raisins- just our family's preference. This is the salad I'm bringing for Thanksgiving again this year by request, and will be making at Christmas too. A definite family holiday staple at our house~

Irish Cream Bundt Cake

Awesome recipe! Inlaws raved over it, have already been asked to make it again this weekend. Only change I plan to make is the glaze- will make 1/3 to 1/4 of what is called for and drizzle rather than paint it on. Personally, the cake stands on its own and doesn't need all the sugar coating, but husband & his family loved that part... This will easily become a staple recipe I'll be asked to make for years to come! ***updating*** I tried this recipe but with chocolate & Kaluha & again got raves from everyone! Next time I think I'll try chocolate cake mix/pudding with the Baileys. This recipe is simply a bo-brainer & turns out perfectly every single time~ EDITED 3/09: I've since made this cake using chocolate cake mix & Kaluha and got rave reviews on it too!

Creole Cornbread Stuffing

Made this for Christmas last year for my Italian in-laws. They LOVED it!! Have been asked to make it again this year; will be cutting back on the pepper combo though as that was the only "suggestion" I got about the flavors.
