About this Cook
I have recently discovered the joys of cooking!! After getting married and starting a family I realized it was time to start making meals. My husband and I used to eat out 4 or more nights a week and then eat frozen meals the others. Now I cook 6 or 7 nights a week and I LOVE IT!!! My husband and I have both had WLS so I love to make low cal - high protein dinners!! I modify most of my recipes with lighter ingredients. YUMMO!
My favorite things to cook
I LOVE TO BAKE!! Doesn't work out for me so well now that I have had WLS - but check out my modified Banana Bread Muffins recips. Half the sugar and hardly any fat - YUMMMO!

Thanksgiving. Nuff Said. We go all out!
My cooking triumphs
Just cooking is a triumph at this point. But I really love getting my cals as low as possible with every dish. I write down everything I put in every dish to figure out the nurtional values for it!!

Super Sausage Gravy
I made this with Turkey Sausage. I was afraid there wasn't going to be enough fat to make the gravy but it turned out PERFECT. Make sure you get the flour stirred in and around the beef really good before you add your milk so you "cook" it a little. I used low carb milk. It was runny but after cooking about 8 minutes it thickened up BEAUTIFULLY. It was a lot of sausage for the amount of gravy - but that's how we like it. This was so easy. It deserves 6 stars for being so easy and extra yummy!!!

Creamy Rice Pudding
YUM YUM YUM!!! I LOVE rice pudding but finding a sugar free variety in the store is a challenge and expensive. This was SO easy. I used Splenda instead or sugar. In an effort to keep it super figure friendly I also substituted eggbeater for the eggs and used 2% low carb milk. I left out the raisins and let hubby and kids add them if they wanted. It was just such a yummy basic plain rice pudding. I liked it warm with a generous sprinkle of cinnamon. Hubby had a cold serving with raisins. Both of us couldn't get enough. And for a HUGE 1 cup serving mine only cost about 170 calories. What a deal!! I'll be making this a LOT!!!

Tomato Curry Chicken
My husband begs me to make this whenever there's an extra beer in the fridge. He'll save one back just so I can make it. So you know he must love it! :)
