Sarah's Banana Bread Muffins
These muffins were fantastic. I followed the suggestions and used slightly less sugar (a mix of brown and white) and cooked the muffins at 325 degrees. I also added 1 tsp. vanilla per recipe. I doubled the recipe for 12 muffins thinking I would end up with about 48 mini muffins; however, I had 84 mini-muffins!!! My guess would be the original recipe for 12 muffins actually makes a few more. For the mini muffins, I recommend cooking at 325 degrees for no more than 15 minutes. Yummy!
