This is a great recipe! I made it for my family, in particular my brother visiting from out of town. He's not the biggest broccoli cheese soup fan.. I wanted to change his mind! I made several changes, but basically stuck to the recipe. I used fresh broccoli, and more than called for. Instead of chicken broth I used veggie broth. I couldn't find the "light" version of the processed cheese, so I only used about half of the block. Also, as some other reviewers suggested, I used 1/2 and 1/2, but only one cup. I also didn't add the cornstarch. I topped it with shredded sharp cheddar cheese (my fave!). With my modifications it wasn't as thick and creamy as the kind you might find in a restaurant, but it wasn't lacking in flavor whatsoever, and everyone, big bro included, really enjoyed it! :)
