Chicken Cordon Bleu II

Five stars isn't enough...this is beautiful and delicious. Personally, I like to use multi-grain bread crumbs for that extra crunch and finish them in the oven (last 1/2 of cooking). Use the smokiest ham (I used triple-smoked) and layer plenty of Swiss in there. A masterpiece.

Oven Roasted Potatoes

I made this for guests along with Chicken Cordon Bleu II and Prosciutto Wrapped Asparagus. They were top-notch! I sliced a little Parmesan over them during the last 10 minutes. Neither I nor my guests thought the herbs clashed at all.

Rempel Family Meatloaf

I've made this one twice, with two totally different results. The first time was excellent, the second time not so much. Unless you're absolutely certain you have enough of each spice/sauce, go with a bit more. And use lean ground beef, or the resulting grease will make a less attractive meal.

This is always a winner. We make it every Christmas for brunch and it's a hit. A word of advice, though...don't even attempt to cut the fat on this one, or the result will be gluey and not nearly as good.

Baked Whole Cauliflower

My kids won't touch cauliflower (nor will I) unless it's done this way. The picture doesn't do the final result justice...I always come out with a golden-brown head of cauliflower. There's never leftovers!

While we have yet to consume it (we're having company tonight), I have to say that this is a BEAUTIFUL cheesecake. Mine did develop a split, but I think that would be solved by using a water bath. Can't wait to try it!

Bow Ties with Sausage, Tomatoes and Cream

Pretty solid. I used rotini vice bowties and added some sauteed bell peppers. I think it could use a little more spice in the sauce, or use the HOT Italian sausage.

Boilermaker Tailgate Chili

This really is a good chili, and a cupboard cleaner as well. It's a nice midway point between the sweeter Cincinnati style chili and the more familiar Tex-Mex.

Grandmother's Buttermilk Cornbread

EXCELLENT! Cornbread is a favorite of mine, and I'm glad I was able to share it with my kids. Made this with some chili recently and it was destroyed. The only improvement I would make is making it in a cast iron skillet, which I don't have anyway.

Refried Beans Without the Refry

These were great. I usually judge a Mexican restaurant by the quality of their refritos, and these would not disappoint. I love the fact that they're fat-free. One note: the onions get a little slimy after slow cooking. If you were to eat these whole instead of mashed, yank the onion before serving.

Pork, Broccoli and Rice Casserole

Pretty good - but not worth the five stars IMO. I left the curry out, because my wife doensn't care for it, and I found it lacking a bit of flavor. The french fried onions over the top are a MUST - this recipe would be pretty bland without them. You can use a cheaper cut of pork and it still comes out tender, making this a good recipe for a budget.
