About this Cook
I'm a food junkie who uses cooking as a way to relax after a hard day, explore the world, and feed my addiction, all at the same time. My best vacations, fondest memories, and life's passions all tie in to food somehow. I'm 29 years old, engaged to a fantastic man, no kids, 2 jobs, and 3 pets. When I'm not cooking, I'm reading about food, watching others cook on tv, and planning vacations based around the whims of my stomach, since it's never steered me wrong! Travel is the other big passion in my life, and one that I indulge as often as possible.
My favorite things to cook
I love anything with a lot of prep work involved (when I have the time, that is!) My favorite parts of cooking are the parts that people take extra steps to avoid - the chopping, peeling, dicing, mincing, etc. I'm never happier than when I have a knife in my hand.
My favorite family cooking traditions
My fiance's mom makes this traditional Danish Christmas soup every year, and getting to eat that on Christmas day is something I look forward to every year. She's promised to teach me how to make it one of these years!
My cooking triumphs
I make the world's best cheesecake. I'll never share that recipe with anyone - it's been handed down in my family for a few generations and no one makes it as well as I do.
My cooking tragedies
I tend to get a little seasoning-happy from time to time, and if something doesn't taste right, I'll keep "fixing" it until it's just plain ruined. Thankfully, I'm learning to quit while I'm ahead, and haven't really ruined anything like this in quite a while.

Easy Cajun Jambalaya
I made some adjustments based on our preferences (we like our Cajun food HOT) and this came out perfectly. I substituted andouille for the kielbasa, added some of my homemade cajun seasoning, went nuts with the cayenne and black pepper, and much like everything else I cook, doubled the garlic. Absolute perfection - it tasted like we were in the French Quarter again. Thank you so much for this recipe!

Irish Soda Bread
This was just plain AWESOME. It was my first attempt at soda bread, and I'm 100% pleased with the results. I left the amounts of raisins and caraway seeds alone and it was just fine. This bread tasted great dunked in Irish Beef Stew (from this site) for St Patty's day dinner, and even better toasted and buttered with a mug of tea for breakfast the next morning. I'm not waiting until March 17th next year to make this one again! Thanks for a great recipe, Ellen!

Irish Beef Stew
This was pretty good, and a nice change from Corned Beef and Cabbage (which I personally can't stand) for St Patrick's Day. It really wasn't anything special though - it just tasted like beef stew to me. It really needs some seasoning though. Salt and pepper and probably something else too (can't think of what.) I'd make it again, and my (Irish-American) fiance liked it, so 4 stars.
