I made this for some great friends that were visiting for the weekend. What a hit! I varied the recipe just a bit. I used 1 container of baby bella mushrooms; instead of the tomatoes, I used a can of Italian chopped tomatoes (drained). 2 cups of good champagne8 oz of heavy cream. Great flavor and I served it with a Caprese Salad and a crusty Garlic, Rosemary bread with olive oil and Balsamic vinegar to dip. My friends begged for the recipe and with four of us, there wasn't a drop left! They were using the bread to sop up any remaining sauce in the pasta bowl!
