I didn't like it at first, but it grew on me. (I had two bowls, lol.) My husband also gobbled it down. I took the suggestion of others and used frozen meatballs (put them in the put while frozen) and instead of the water/bouillon, I used two cans beef consomme + 1 can water. Didn't have cilantro (wish i did). Sour cream garnish is a must!

Russian Mushroom and Potato Soup
Says my husband, "It's good. It's filling, smells good, but it's just not my first choice in soups." I tend to agree. I substituted the half-and-half with sour cream, and the leeks with one small onion, per other reviews. I wish this soup were thicker, and I'll have to play around with the amounts of flour to find the right consistency. No need to garnish with fresh dill - it's dilly enough at the end of cooking to not warrant it.

Avocado Feta Salsa
They should call this "disappearing Salsa." I brought this to my wedding shower, and by the time I went up for seconds, it was already gone! I omitted the spices and used fresh cilantro as others have mentioned. Also used two avocados, and what amounted to about a cup of chopped tomatoes. Only had white vinegar; I'm sure balsamic would be tasty as well. I got adventurous and threw in "garlic and herb" feta instead of regular. Next time I make a batch, I'm keeping it for myself and throwing it into some pita bread!
