Gingerbread Boys

even though I chilled the dough for 2 days, it spread like crazy in the oven. made a very thin, crispy, light cookie. not the dense chewy gingerbread I was after.

Chile Cheese Squares

I altered the recipe as follows: used Extra Sharp Cheddar, appox. 1 lb chopped fresh roasted Hatch green chilies, and a pinch of salt and chili lime seasoning in the eggs. Awesome!

Connie's Zucchini 'Crab' Cakes

These are great! I used whole wheat bread crumbs mixed in, and coated them with panko crumbs. Doubled the Old Bay. I took the advice of another reviewer to bake them at 400 for 12 min. I buttered a foil lined pan and baked them a bit longer. Crispy, not greasy! I didn't strain the zucchini and had no problem. Great with heirloom tomatoes!!!

Lava Lamps

Made with Asti Spumante and strawberry lime jello. YUM! The jello came straight out of the freezer and sank- next time I'll try letting it warm up. With the champagne, it's not really a shot, but you have to slurp the jello up a the end unless you shoot it. A lot of guests didn't eat the jello and said it was squishy. But, this was at a bridal shower, and not a very wild crowd. Will definitely make again.

Summer Beer II

Very simple and very good. We used Heineken and doubled it for a party with 10 guests. (We also served Lava Lamps.) Definitely serve on ice. And it is more widely known as Strip and Go Naked.

This was my first attempt with this complicated bread and it came out great! Everyone loved it and it has the right hint of honey and it's not dry at all. I even did the 6 strand braid- if you've never done it, go to YouTube and find a video of how it's done. BEAUTIFUL!

Candy in the microwave? Yes! Forget the mere defrost and reheat functions, your microwave is crying out for glamor,elegance... and hard crack candy! Amazing, fast and way easier than pie. I adjusted the cooking time to about 3 min on level 8, 3 min on 8 again, 1 1/2 min on 7 or 8, and sometimes another round at 8 for 30 sec if it's not very golden brown yet.

Granny Kat's Pumpkin Roll

This was a disaster when I tried to roll it. My icing popped out so that I could not roll it tightly. Using less icing may help, and if I ever try this again, I will chill the icing until it is fairly firm and allow the cake to cool longer. Four stars for taste, negative one star for being a pain....**Update- 2nd attempt: I used wax paper on the pan, then another sheet on the inside when I rolled it. This prevented it from sticking to the towel. Greasing it would be good too. I didn't soften the c. cheese as much and chilled it while the cake cooled. This made it much easier to spread w/out gushing out. Came out almost as good looking as the pics-- I'll keep trying! Tastes awesome.
