I used some pears in place of the peaches, they were available. I blanched them in some water with a bit of sugar and a pinch of salt because they were still very firm. Also I used basil and cilantro to add a little variety and depth to the taste. I'd say it turned out very well, it's good just on chips but the flavers really came out when I grill marked then baked some chicken with the salsa on top of it!
