Oh So Tender Brisket
Wow, this was awesome! I left out the liquid smoke since I didn't have any on hand. Cooked it in a swallow roasting pan, covered it with tin foil. I didn't have to add any fluids at all, the moisture off the tin foli just fell back in the pan with the meat. Even PICKY son said it was good! Did I say WOW?!

Portobello Mushroom Burgers
This was great despite the fact that I broke the mushroom trying to remove the stem. I also cooked it indoors, on top of the stove. That worked fine. I topped mine with Bleu Cheese and grilled onion as other suggested. I think any cheese would work, go for what you like.

Tomato Pork Chops I
This was a very easy recipe to prepare. I used a jar of diced tomates in place of the tomato sauce, also minced dried onion since I didn't have any fresh on hand. I also added some hot sauce for zing, about 5 drops, could have used more and will next time. Will try this one again.
