Super-Delicious Zuppa Toscana
I LOVED this soup! I used spinach because couldn't find kale. I bought the kind in the bag and just added it until it looked right. I also used low sodium chicken broth but needed to add salt in the end. I also used only 1 tsp of red pepper flakes and it was perfect. I found that it did not freeze and reheat well - the second time around the bacon was chewy and the potatoes were completely crumbled and mashed. BUT, over all it was delicious and I would definitely make it again!

Waikiki Cornbread
My husband and I LOVE this cornbread! I have been making the cheapie jiffy cornbread for years, and decided to try something different when having guests over. I think we gobbled up the entire pan! If you are looking for a dense cornbread, similar to the box kind, this is not for you! This recipe is for a very sweet light bread, and I often serve it on a plate with a fork, like a cake. It also makes a HUGE 9x13 pan, so it's great for groups. (or families!)

Greek Lemon Chicken Soup
I'm not sure where I went wrong on this recipe... It didn't turn out awful, but definitely NOT what I was expecting! I followed the recipe exactly with the exception of decreasing the soup base, and using orzo instead of rice. After 3 bites I couldn't eat any more- WAY too much lemon!!! My husband asked what I put in the soup, and when I told him 1/2 cup of lemon juice he started laughing - I double checked all the ingredients and directions to see if I made a mistake, and I followed it exactly. At first I considered trying it again with 1/2 the lemon juice, but after cleaning up dinner am so sick of it that I don't think I will. I guess I was expecting it to be similar to a greek restaurant soup that I really love that had a hint of lemon, but this is definitely LEMON Chicken soup!
