Moist Garlic Chicken
I used approximately 2 pounds boneless skinless chicken thighs, otherwise followed recipe except I didn't have Italian seasoning so I added some oregano and used garlic powder instead of garlic salt. Turned out very moist and tasty.

Corn Bread Muffins
Very good low fat corn muffins. My batter seemed too thin so I added about 1/4 cup whole wheat flour. Then ended up with 15 smallish muffins. Maybe I didn't need to add the extra flour.

Creamy Carrot Soup
This was the first time I have made carrot soup so can't compare to other recipes, but I thought it was delicious! I doubled the recipe and used evaporated milk instead of cream, and dried dill (about 1 tsp) , otherwise everything else was the same.
