Flatlander Chili

Reviewed: Dec. 21, 2009
A good recipe when you omit the cumin and add corn. My boyfriend and I both thought there was something missing, but this may be due to the fact that I rinsed the canned beans this time, and never have before. We enjoyed this chili, but would spice it up next time.

Baked Honey Mustard Chicken

Reviewed: Dec. 21, 2009
This was unexpectedly easy and, as another reviewer commented, very classy! The paprika adds an interesting flavor to the mix...I would add a bit less of it next time. I used this amount of sauce for two large chicken breasts, and there was a nice amount of sauce for our mashed potatoes. Thanks for the recipe!

Beer Roasted Lime Chicken

Great and easy recipe! I didn't have a lime, so just squirted some lemon juice in the appropriate areas...and added a clove or two of garlic to the can. I will be using this again and again!

Shortbread Cookies II

Yum. Simple, delicious, decadent. Don't wait until the tops get brown though, the bottoms are brown way before then. 12 minutes is perfect in my oven. And I don't own no fancy cookie press, just made them round with my hands and squashed em...delicious nonetheless!

Sauteed Garlic Asparagus

Really good, not stringy! I think the key to this recipe is covering the pan...and don't put the burner on past medium. Good stuff!

Creamy Rice Pudding

Reviewed: Nov. 29, 2009
This is very tasty...just like I thought it should be. My Mom tried to tell me to mix my cooked rice with vanilla pudding, and I just couldn't believe that that was the best recipe out there. This is great, much better than the alternative!

Steak 'N' Vegetable Soup

Delicious soup, although it turned out more like a stew. The fresh herbs really do make this great.

Orzo and Tomato Salad with Feta Cheese

Reviewed: Apr. 17, 2009
Very good! Not too strong, the natural flavors of the ingredients blend very nicely and do not need more dressing, I feel! Of course, I used far less oil and lemon juice than the recipe called for...less than a quarter cup of oil, and I just put half as much lemon juice as oil, it worked out fine! Thanks for a great recipe that I'll use again for sure!

Greek Chicken Stew (Stifado)

Reviewed: Apr. 17, 2009
Good, but not great...it smelled so good while simmering that I was anticipating a very flavorful meat...but the meat was on the dry side, with not much flavor! I will make it again, as I like the flavor of the broth, but next time I will pierce the raw chicken with a fork to get the flavor in, and I'll cook it at a lower temperature for longer.

Caesar Salad Croutons

Reviewed: Apr. 17, 2009
Great croutons, are very munchable as a snack. I added savory, dried parsley and some dried chilies...not spicy but oh so yummy. The oil and butter together is the key, and I don't clarify the butter first or strain the garlic and spices out, or fry the bread...just sautee and brush on! Flip bread pieces once and brush again, it takes about 30 minutes at 300 degrees...I love these croutons!

Orzo and Potato Parmesan

Reviewed: Apr. 13, 2009
Not bad...I had no carrots so used peas and frozen kernel corn instead...it is a bit bland though, and I felt the italian seasoning was overpowering. I will make this again, but will omit the thyme and use more oregano and basil.

Broccoli and Cheese Stuffed Shells

This tasted good, but I felt it was alot of work for something that was just alright. Maybe adding some more veggies and flavor to the stuffing would be better...or maybe I just don't like stuffing manicottis.Good but a bit bland.

Fresh Asparagus, Tomato, and Feta Salad

Very good! We agree that the recipe makes too much dressing, so I cut it in half...also we omitted the cilantro, and it was very tasty and healthy with light feta!

Slow Cooker Barbequed Pork for Sandwiches

This took a long time but was yummy...I would cut down on the amount of BBQ sauce next time, as it drowns the flavor cooked into the pork.

Fried Rice Restaurant Style

Reviewed: Mar. 16, 2009
Great! And all the comments were good too...I used leftover rice, and the only veggies I had were peas and cauliflower...stirfried them with some garlic, added eggs with soy sauce, pepper, and a bit of hoisin sauce mixed in, cooked with the veggies and added the rice. It's simple and versatile and yummy...and a one wok dish! Thanks!

Amazing Pork Chops in Cream Sauce

Reviewed: Feb. 21, 2009
Great recipe, great sauce! I did not have to use heavy cream, as we watch our calories, so after cooking the pork in the wine, I removed the meat, added mushrooms and some garlic, and once they were cooked, added about a quarter cup of flour, to make a roux. Then slowly stirred in milk (1% is all we buy) until it was all mixed in and creamy. It turned out great, and I used some parsley and savory because I had some on hand...very good mushroom sauce, which I will use in place of mushroom soup in recipes from now on! Thanks!

Chicken Pot Pie II

Reviewed: Feb. 9, 2009
Delicious! We both loved it...I made it in pie shells instead of a casserole dish, and had to make 2 pies with this recipe! So that's 4 pie shells, 2 bottoms and 2 tops. Instead of 2 cups of frozen vegetables I boiled a sliced carrot and a sliced potato for a few minutes, then added frozen peas and frozen corn to make up just over 2 cups. And we didn't have enough leftover chicken to make a pound and a half, but I had about 2 cups of cooked chicken, and that was enough. Very good flavor, go easy on the thyme, though. And of course, my man eats it with ketchup, cuz it tastes better that way! Thanks for the great recipe!

Pork Chops in Red Sauce

Great tender pork chops. I never use canned soup anymore, as I have found that tomato sauce with no added salt is a much healthier alternative in recipes, and just as tasty. With some added spices this was a very tasty dish.

Vegetable Bacon Chowder

Reviewed: Jan. 17, 2009
This was good soup, chowdery and purple! I added onions and used peas instead of the green beans, and used oregano and some garlic powder, and it was flavorful. The cooked cabbage and bacon and onion makes it smell and taste a bit like a loaded hot dog! Different, but I don't think I'll make it again.
