Blue Cheese with Capers and Red Onion

Spiced Sweet Roasted Red Pepper Hummus

I really enjoy this hummus and so do my friends. It’s a staple in my house now as I always have the ingredients on hand. Here’s a little tip, keep cans of garbanzo beans and jars of roasted red peppers in your refrigerator. Then when friends drop by unexpectedly, throw this together in seconds and you don’t have to worry about the chilling time.

Chicken Katsu

I love Chicken Katsu but had never thought to make it at home because I usually pick it up at a Hawaiian restaurant on the way home from work. But when I came across this recipe I had to give it a try. Wow! I love it and it was so simple to make. Just writing this review has me hungry for it right now! Thanks for sharing the recipe with us.

Mom's Italian Beef Barley Soup

Pennsylvania Dutch Corn Pie

Ok, I’m sure I’m not the only person that when they first saw this recipe said to themselves. Corn…pie…corn…pie…Corn Pie??? You have to admit, the words corn and pie usually don’t go together, until now! This was great and I can’t wait to make it again so I can add chicken like it suggested some people do. I guess I shouldn’t have been surprised recipes like this coming from Amish country, simple, hearty and delicious. After all, among so many other wonderful things, they gave us buttermilk pie…hey wait a minute…

Pasta Fagioli

This recipe is great, and is now posted on my refrigerator! I love Pasta Fagioli but for some reason I had never made it at home before. The great thing about this soup is that with the exception of the celery, everyone should already have all the ingredients in their pantry. I made the recipe as given the first time, but now substitute a medium can of diced tomatoes for the 2 medium tomatoes and it’s just fine. If you can’t fine cannellini beans where you live (is that possible in this day and age?) any canned white bean will do.

Classic Bran Muffins

Great little recipe as is, and I too now make bran muffins every week. But I have made some of the changes others have mentioned. Replaced the vegetable oil with no sugar added applesauce and play with other dried fruits instead of the raisins. I think substituting the oil for the applesauce not only makes a healthier muffin, but generally, just a better tasting muffin. Try dried mango that you’ve diced up and reconstituted with rum. Wow…now that’s a bran muffin!

No-Mayonnaise Ranch Dressing

This is a great little mayo-free dressing! In an attempt to eat healthier I was looking for low-fat/fat free dressing recipes and found this one. I made it but didn’t use it for a day, so it set in the refrigerator overnight and that allowed the flavors to combine. I’m really glad to have this recipe; it’s hands down a better option than the low-fat/fat free dressings in the store.

Baileys Raspberry Martini

I made these for friends at a Christmas Eve cocktail party this year and we all loved them. Of course since it is made with Irish cream you know right off the bat it’s going to be a sweet drink. So you’re not going to be drinking them all night. We made them at the beginning of the evening, everyone had two and then we moved on to other less sweet cocktails. Regardless, they were very good and I know I will make them again sometime in the future.

Cold Shrimp Dip

I agree that this recipe is easy and perfect to take to parties. I made it to take to a Christmas Eve cocktail party and it was gone in no time at all. I do have to confess that I did something I never do, I changed the recipe. I used a pound of shrimp not the ½ pound the recipe called for. Come on, who doesn’t love shrimp! Also, I don’t eat potato chips but served this with whole wheat grain crackers. Great recipe and I know for a fact I will be making this many times again in the future, thanks for sharing it with us!

Cranberry Walnut Relish I

I made this relish this year for Thanksgiving and everyone really liked it. What I liked about it was how easy it was to prepare, and that you can make it a couple of days ahead of time and just keep it in the refrigerator. I was going to use what was left over the next day for turkey sandwiches, but there wasn’t any left! Definitely will be using this recipe again, thanks for sharing.

Yogurt Cheese

This cheese is delicious and so easy to make! I’m a huge cheese person, but am trying to eat healthier these days and this cheese helps me do just that. Thanks so much for posting it and like the others, I can’t wait to play with it a bit with different herbs and spices.

Cherry Fluff

Don’t let the ingredients fool you on this one. When I first read the recipe I was sure this was going to tastes terrible, despite the great reviews. I mean come on…cherry pie filling and sweetened condensed milk? But I love trying new recipes and have several friends that allow themselves to be willing genny pigs. Well, I made it some time ago and sure enough, it was really very good. Everyone liked it and a couple of people even asked for seconds. So, in the recipe box it goes and I am sure I will be making it again in the future. Next time I will take the suggestion of others and add some chopped pecans to it.

Black Bean Salsa

I’ve been making this salsa for several years now and it’s always a big hit. The nice thing about this recipe is that it’s quick and easy. I make it often on camping trips, and with the exception of the green onions and cilantro, you can keep the ingredients in your food box at all times. Onions and cilantro are standard items for me as well, but if you didn’t have the cilantro with you I think it would still be fine. After all, who doesn’t at least have onions with them when they go camping?

Coconut Pineapple Pie

I tried this recipe today for Sunday dinner and it didn’t work. I always follow a recipe as given the first time around, but as given this pie never sets. Believe it or not in total I cooked this pie for 1 ½ hours! I will say it came out looking just like the photo, which was nice. But the pie itself never set up as it should have. It smelled and looked nice but that was it, to bad, I was really looking forward to it. I think I will keep the recipe and play with it a bit, as the others did and see what happens.
