Artichoke & Spinach Dip Restaurant Style

I have made this several times now, using a few variations. Basically now I just throw in whatever ingredients I have that are similar to what is called for in this recipe - I always include the alfredo sauce, spinach, and mozzarella and parmesan cheeses. I add artichokes only if I have them, and I usually use sour cream instead of cream cheese, simply because I always have it on hand. Regardless of what I add/don't add - this is always delicious! It is literally fool-proof, and is amazing with tortilla chips.

Broiled Scallops

I've been making scallops for a while now, but I've always sauteed them. Broiling them instead makes a HUGE difference, in my opinion. They were so much more tender! This was delicious!

Zippy Summer Shrimp

Absolutely fabulous! I was looking for a shrimp recipe I didn't have to grill, as it was raining, and this was perfect!! So so easy, and the sauce was delicious over spaghetti too.

Alfredo Sauce

I was not a huge fan of this. I used freshly grated Parmiagiano Reggiano, and maybe this is one of the few recipes where the pre-grated bagged cheese would actually taste better. I think I prefer the flavor of the recipes with a cream cheese base (i.e. "Quick and Easy Alfredo Sauce" from this site).

Beer Batter Fish Made Great

This batter was delicious! I used Negro Modelo beer, because it was the only kind I had on hand, and it was perfect. I added some Old Bay seasoning, and used a skillet instead of a deep fryer. I used about half the batter to make onion rings - this batter is even better for them!!

Fluffy French Toast

Delicious, and i used almost week-old French bread, which was almost impossible to cut into slices! It was still fluffy and soft. I won't even be trying other French Toast recipes.

Ratatouille

I was not crazy about this - the vegetables were a great combination, and the flavor was good, although a little weak in my opinion, even with the addition of some basil and oregano. I was expecting it to have more liquid too - maybe I will try again with more olive oil and a splash of wine. I noticed on some of the other ratatouille recipes that the amount of olive oil was higher - about 1/2 cup. Still a very healthy dish with lots of potential!

Grilled Marinated Shrimp

This was sooo delicious! I used frozen fully cooked shrimp, marinated it for about an hour and put it on the grill on skewers for about 5-6 minutes, turning once. I added fresh basil and oregano, which I would definitely recommend. This will definitely be one of my go-to summer recipes this year!

Pita Chips

So good! I cut the pitas into 6 pieces (without splitting the two halves), which resulted in large, thick chips that were delicious! I just used olive oil, garlic salt, and Italian seasoning. Served with roasted garlic hummus. Yum!

Double Tomato Bruschetta

Perfect bruschetta! I didn't have sundried tomatoes, so I just used all fresh, and this was still delicious. I would like to try it with the sundried too next time though. Balsamic vinegar is the key, I can't believe how many recipes on this site for bruschetta didn't include it! I won't be trying any other recipes though, this is perfect!

Strawberry Pie II

This was very good tasting, but the presentation wasn't very nice after you poured the syrup over the top. Maybe I did something wrong, but it was pink instead of red? I will probably try a different recipe next time to see how that looks.

Grilled Apple and Swiss Cheese Sandwich

I was so surprised by how good this sandwich was! Definitely use Granny Smith apples, I think you need that tartness to make it work. I just used regular wheat bread which was perfect.
