Chicken Puffs
We will make these again! I cooked the chicken in EVOO with garlic, salt and pepper. I then shredded it and mixed it up with cream cheese and garlic powder. I didn't have croissant dough, but I did have some home style biscuit dough. I took each biscuit, rolled it out into a flat circle and put the chicken mixture in the middle. I rolled another biscuit and put it on top of that. I used a fork to press the edges together and brushed with EVOO and then some garlic salt. This was so pretty and easy! I won't even try this with crossiants, only biscuits. A great meal for picnics or weeknight. You could make the chicken mixture the day before and just throw it together. I might put green peas into it next time for some color. Serving this with gravy was key!!!

Quick and Easy Chicken Noodle Soup
Love this recipe! So easy to whip together. I bought a rotissere chicken and used that for the soup. Although I think this is a good quick way to get chicken in the soup, it felt apart and was really stringy and i think a bit overcooked. I will try to make the time to do my own chicken next time. I did use chicken bouliion instead of broth and while I think this added flavor it also added salt. I did not add any other salt and still felt it was borderline too salty. Next time I'll use more water with the boullion. We LOVED this soup. I doubled it and it was nice to have for a couple of meals. This will be a Fall fave in our house!

Mini Cheesecakes I
These were terrific and EASY! I made in an afternoon for dinner that night and I have 3 kids running around. Leaving out the cream cheese overnight or all day helps in a major way to soften it. I use a food processor to grind up the whole box of vanilla wafers and didn't use all of them, so I have that for the next time! I added mini chocolate chips to 1/2 the batter for chocolate chip cheesecakes. I had fresh fruit and canned fruit as toppings and shaved a dark chocolate bar on top of all that and it looks so fancy! Made about 18 regular "muffin" sized cakes.
