Lentil Loaf
I was pleasantly surprised at the flavor and moistness of this loaf! My 8 & 4 year old boys gobbled this up and Dad too (we do eat primarily veggie dishes). We have wheat intolerances so I substituted Kamut/Spelt bread & omitted bread crumbs. I also added 2 cloves of minced garlic, fresh parsley, omitted vegetable soup mix, added tomato paste and a little bit of ketchup (as well as squirted some on top while cooking). I also sauteed some onion and grated carrot and added to mixture. Melted goat cheese on top in the last few minutes. Served with a vegetarian gravy from this site.

Southwestern Vegetarian Pasta
Good quick recipe for kids, 3.5 stars. I used olive oil instead of veg. oil, doubled the garlic, didn't have green peppers so substituted mushrooms, added a can of tomato paste, added a bit of brown sugar, salt and chopped cilantro. Due to dairy/wheat allergies omitted cheese and used brown rice pasta. The recipe was not spicy at all, so kids enjoyed it(3&7 year old).

Vegetarian Bean Curry
Tasty recipe with some additions. Added potatoes, green pepper, mushrooms and just prior to serving a can of coconut milk and chopped cilantro. I omitted the raisons. Lentils required longer cooking time. Husband and 5 year old enjoyed it.
