3-Cheese Pasta Bake

I thought for sure my 3 kids ages 7, 4, & 13 months would love this. However my 13 month old was the only one who seemed to really like it. I thought it was fair & so did my husband. I substituted the cream of mushroom with the cheddar cheese soup as suggested by a few others. It would have been helpful to know how much 4 cups was uncooked. (I'd say it was about 2/3 of a 14 oz. box.) I didn't quite have 4 cups, so I had to re-boil my water & make more. Pain, but my mistake.

I was pretty satisfied at how this dish turned out. I was especially pleased at how quick & easy the prep was. This is the kind of dish a mom wants to make at the end of a long, busy day.

California Kabobs

The marinade was really good, although I tripled it so that I could also soak the vegi's in the sauce. I also omitted the mushrooms (we don't care for those) and added broccoli, squash & zucchini. I will surely make this recipe again this summer!

Sausage Potato Bake

I would make this again, however, I think I would cut back on the potatoes and add more carrots and sausage. I did add those this time, but they just seemed overwhelmed by all of the potatoes. I took other folks advice and substituted the beef soup with french onion soup, and that was a good choice. I may even add a can or 2 of corn also the next go around.

Dave's Mocha Chicken

This had a good flavor, but I was really hoping that the consistency would be syrupy & stick to the chicken. My broth was just really loose & watery, so I was a bit disappointed. I did however switch from legs to breasts because my husband doesn't care for chicken on the bone.

Ambrosia Salad

I did change up this recipe quite a little bit. I just used regular flavor marshmallows instead of the flavored, but next time I think I will do the fruity marshmallows. I also added a little mayo too. Maybe 1/2 cup. Also I added a small can of marashino cherries (cut in half.) And about 1 cup of chopped walnuts as well. I chilled a good long time (approx. 6 hours...the longer, the better.) This was good. Great for an occasion with kids!

Potato and Egg Casserole

This recipe is pretty time consuming, so I don't know how often I'll actually make it in the future. I followed the directions for the most part & boiled the potatoes a little longer (about 22 minutes) as other reviewers had suggested. But my husband still thought they were a wee bit hard, (I thought they were fine.) I also cut the margarine to 1/2 cup as well. I added a little bacon to make it more of a main course meal, but my hubby thought it was more of a breakfast dish. It was good, I liked it.

Crunchy Turkey Salad

This was a GREAT recipe for my leftover thanksgiving turkey! For the most part I stuck to the recipe, but I did change the quantities. I added more turkey & walnuts and less apple & celery. It definitly needed more turkey than 1 cup. My own twist was to add about 1/4 cup dried cranberries and that gave it a nice zing. I liked this sandwich a lot, but it could be served as a salad a well.

Ham Broccoli Braid

I used others advice and used 1/4 cup sour cream & 1/4 cup mayo. I also substituted monterrey Jack for Swiss & turkey ham for pork ham. I cooked my braid on a pizza stone and it took atleast 15 minutes longer to cook. I don't know if it was because I cooked it on the stone or not, but just FYI!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

None of my family members cared for this unfortunately. The bacon was especially disappointing; it never got crispy and was a real turn-off. I used thick bacon as instructed, but perhaps a thinner bacon would have crisped up better.

Chicken Puffs

Yum! These are really good! I made them for dinner & my husband didn't really like them too much, but I sure did! I will make these again but as an appetizer and bring them to an upcoming potluck. Can't wait to see how they go over there.

Chicken Taquitos

I don't give a lot of 5-star ratings, but I really dug these & my husband did too! My only complaint was that they were difficult to roll. But when I rolled them quickly & fried them 4 at a time they worked out o.k. Just took a little trial & error. I did however change the recipe quite a bit. Here's how I did it: 3 chicken breasts boiled & shredded 1 1/2 cups fiesta blend cheese 2/3 cups thick salsa 1 4 oz. can green chili 2 tbsp. taco seasoning This is a great addition to our "Mexican Monday" rotation!

Chocolate Almond Bark

I didn't think the almonds needed to be roasted before hand. I thought it just gave the bark a weird taste when it was finished. Next time I will try just coarsly chopping my whole almonds and dropping them in. I also thought the recipe should have been doubled.

Spanish Rice Bake

I wish I could actually give a 4 & 1/2 stars! This was quite tasty. I substituted ground beef w/ ground turkey. I also didn't have chile sauce, so I used salsa instead. Plus I added a lot more fiesta blend cheese on top, maybe 1 1/2 cups.

Bowties and Broccoli

Overall I thought this was o.k., I ate my helping, but my overwhelming impression was: BLAND! I even added grilled chicken, pine nuts, extra cheese, & garlic and basil seasoning as others had suggested in other reviews and it still was missing "it." Definitly underseasoned for my taste and my husbands as well. Not sure what else to try to make it tastier...so I guess that's it for this recipe!

Buckeye Balls II

These were delicious, but very very sweet! I'd definitly classify them not as a cookie, but as candy. They were a little too sweet for me, but they are still great! Also, they were a bit time consuming to roll & dip. I think next time I will just try bars instead. (But they were fun to make.)

Crabby Cream Cheese Wontons

THERE WERE TOO MANY SAUCES IN THE FILLING. THEY WERE NOT NECESSARY AT ALL! I AM GOING TO TRY THESE AGAIN, BUT ONLY ADD THE: CREAM CHEESE, GARLIC, & GREEN ONION (I'D KEEP THE CRAB, BUT I DON'T EAT SEAFOOD.) BY DOING THIS I HOPE TO RETAIN THE INTEGRITY OF THE CREAM CHEESE FLAVOR. ALL OF THE EXTRA SAUCES ARE JUST TOO OVERPOWERING. MY HUSBAND THOUGHT THE WON TONS TASTED LIKE THEY WERE STUFFED WITH FRENCH ONION DIP. HOPEFULLY WITH THE REVISIONS THEY WILL BE GREAT NEXT TIME AROUND.

Beef Nacho Casserole

I tried this recipe but made a few alterations. First, I substituted ground beef with ground turkey. Always a healthier choice. Then I replaced chili powder with 2 tbsp. of taco seasoning. I also reduced the salsa to 1 cup & added 1 can of black beans in with the corn. Instead of 3/4 mayo I used 1/2 cup of sour cream & 1 heaping tbsp. of mayo. Once complete, this was really easy to make and so good! I totally loved it! My husband said it tasted like Nachos Grande. It's also is a good recipe if you have broken up pieces of nacho chips left at the end of a bag. I found the smaller more crumbled up pieces filled it in great. Thanks for the new recipe!
