Zesty Chicken and Potatoes

I thought this was pretty good, add how easy it was to make and I'll be making it again. I used boneless skinless breasts, and regular Itatian dressing. I marinated the chicken in the dressing for about 40 min first. Added carrots with the potatoes (I cut small bite sized), and course ground black pepper. Then with the chicken I sprinkled on some chicken seasoning and black pepper on top. I also lined the pan with foil underneath, along with covering it. At the end I topped with shredded mozz cheese. I didn't have lime juice, but it turned out fine.

Apple Crisp II

This was great! I made this yesterday to take to a party last night, I am so glad I picked this recipe (I've never made an apple crisp before). It was one of the first desserts gone! My little changes were : Only used 1/4 c water, cut white sugar down to maybe 3/4 c, added a little vanilla and couple shakes of cinnamon to the topping. Added a little nutmeg to the apple mix, which I shook all that up with the apples instead of sprinkling on top. Still have apples left and thinking about making again :)

Coffee Shake

Very good, and so easy (AND much more cheap than a fancy coffee shops!) I used a little less sugar, but followed the suggestion of adding mini-chips. I also added some more ice and instant coffee. No matter what you do, this is great. I made a little to much, so I put the extra in the freezer (maybe 20 min), then decided I wanted the rest, and by then it was nice a slushy.. even better :)

Pumpkin Cookies VI

I love when I find a recipe that I can make pretty healthy, thats still delish! These are thick and moist, but don't know if thats due to some changes? I used whole wheat flour, applesauce instead of butter, 1/4 c white sugar instead of 1/2 c.. but still put in choc chips :) Added about 1/2 tsp nutmeg, heaping tsp ground flax seed and used 1 tsp cin insread of 1/2.. very good, enough so that I made them last night, they are gone.. and I just pulled more out of the oven just now.. (you know, cause I had to use the rest of the remaining canned pumpkin, ha!)

Applesauce Oatie Cookies

Delish! I modified a little to make a bit more healthy of a snack for my 18 mo old twins, and used 1/2 c reg flour and 1 c whole wheat flour. Used 1/2 tsp additional cinnamon, a little vanilla, about a spoon full of vanilla yogurt (I thought it looked a little dry), and left out the chocolate chips, nuts, and raisins. A keeper recipe.

Seminary Muffins

I used whole wheat flour, used about half the salt, added a bit of nutmeg and ground flax seed, left out the nuts (becuase of my kids) and chocolate chips - outcome was a great tasting, healthy muffin. I also mixed the oatmeal with the applesauce and let it sit for maybe 30 min first, helped soften/breakdown the oatmeal some so it wasn't as noticable in the muffin. My 17 mo old twins loved them, too :-) Thanks for sharing, definatly a keeper recipe!
