Cranberry Applesauce Muffins

Did the 1 1/4 c applesauce, 1/4 c oil, 1/2 ww and 1/2 ap flour, added some nutmeg and vanilla, 1/4 c brown sugar and 1/4c white, soaked craisens in some oj for a bit before added.. and also added some mini choc chips :)

Savory Crescent Chicken

Followed other reviews and cooked chicken in evoo, garlic, pepper. I also added dried chives to the cr cheese mixture (used 1/3 less fat cr ch), left out butter and pimento (didn't have). Topped with itailian bread crumbs.

Crunchy Oven Fried Tilapia

Pretty darn good. I thought it was as close to fried as you could get for baked. I added more seasoning/spices, even dill in with the cornmeal. Used foil to line cookie sheet, baked 10 min, then put in broiler for 1-2 min.

Pumpkin Bars I

Have made this a few times, always love it. Never have the walnuts, so I leave that out. Usually do the full recipe on a large cookie sheet. Today I did a half recipe for just one 9x13, and used the pumpkin bar icing from here.. awesome. Took it to family gathering tonight and got several compliments. I followed other reviews and used applesauce instead of oil, 1/2c white and 1/2c brown (for the halved recipe), added some nutmeg, vanilla, and a dash of cloves. I mixed the dry ingredents in one bowl, and the eggs, pumpkin, applesauce, vanilla in another, then added wet to dry (I usually do, I don't like to overmix). I think next time, when I make it for just at home, I will try ww flour and even a little less sugar.

Slow Cooker Pepper Steak

Blueberry Zucchini Bread

Yum! I health-a-fied it up some, too. Used 2 c ww flour and 1 c ap flour. Used 1 c br sugar and 1/2 c white. Replaced 1/2 the oil with applesauce. Sprinkled in some nutmeg. And I even put in some shredded yellow squash that I needed to use up. Made muffins with the same temp, at 20-25 min like another reviewer suggested.

Yummy Honey Chicken Kabobs

Used evoo instead of veg oil. Great marinade! Let it soak for about 4 hrs. Didn't marinate the veggies I used, just coated them with evoo. Also used minced garlic (all I had on hand).

Chicken Cordon Bleu I

Good and easy! I didn't have swiss cheese on hand.. so I cheated and just sprinkled in shredded mozz, worked out good. On the outside of the flatened chicken, before seasoning, I rubbed on some EV olive oil.. then put on the s&p and also garlic powder.

Banana-Zucchini Bread

Very good.. I did add about 8 oz of crushed pineapple (suggested by another reviewer) because I thought the batter looked a little to dry.. and I didn't have any more zuc to add. I used applesauce instead of oil, and 1/2 ww flour. Left out the crans and walnuts since I didn't have any. Will save this recipe!

Hamburger Potato Casserole

Awesome comfort food :) I added some extra seasonings (when cooking the meat), added a big spoonful of sour cream, and some shredded ched to the soup mix (I think next time I will add a little less milk because of that). I quarter sliced the potatoes so they would be easier to eat for my toddlers. And I covered with foil.. will make again for sure.

Oven Brown Rice

VERY good, for sure a keeper. I added some diced carrots and frozen broc florrets (they turned out a little mushy, but oh well).. I took the advice of another review and used two cups of instant brown rice (I didn't have reg) and it worked out just fine. Also used garlic powder instead of garlic salt.. and used 1/2 the seasoning salt.. and covered with foil during baking. Next time I might add a splash of worcestershire sauce.. but over all, yummy!

Uncle Bill's Chicken Strips

I thought these were pretty good, and my 2.5 yr old twins gobbled them up! I didn't use buttermilk (didn't have any), followed another reviewer's advice and used milk with splash of lemon juice.. also foil lined my dish. I didn't use butter, just sprayed dish well with Pam olive oil, then sprayed the top of the strips with some more.

Zesty Chicken and Potatoes

I thought this was pretty good, add how easy it was to make and I'll be making it again. I used boneless skinless breasts, and regular Itatian dressing. I marinated the chicken in the dressing for about 40 min first. Added carrots with the potatoes (I cut small bite sized), and course ground black pepper. Then with the chicken I sprinkled on some chicken seasoning and black pepper on top. I also lined the pan with foil underneath, along with covering it. At the end I topped with shredded mozz cheese. I didn't have lime juice, but it turned out fine.

Apple Crisp II

This was great! I made this yesterday to take to a party last night, I am so glad I picked this recipe (I've never made an apple crisp before). It was one of the first desserts gone! My little changes were : Only used 1/4 c water, cut white sugar down to maybe 3/4 c, added a little vanilla and couple shakes of cinnamon to the topping. Added a little nutmeg to the apple mix, which I shook all that up with the apples instead of sprinkling on top. Still have apples left and thinking about making again :)

Coffee Shake

Very good, and so easy (AND much more cheap than a fancy coffee shops!) I used a little less sugar, but followed the suggestion of adding mini-chips. I also added some more ice and instant coffee. No matter what you do, this is great. I made a little to much, so I put the extra in the freezer (maybe 20 min), then decided I wanted the rest, and by then it was nice a slushy.. even better :)

Pumpkin Cookies VI

I love when I find a recipe that I can make pretty healthy, thats still delish! These are thick and moist, but don't know if thats due to some changes? I used whole wheat flour, applesauce instead of butter, 1/4 c white sugar instead of 1/2 c.. but still put in choc chips :) Added about 1/2 tsp nutmeg, heaping tsp ground flax seed and used 1 tsp cin insread of 1/2.. very good, enough so that I made them last night, they are gone.. and I just pulled more out of the oven just now.. (you know, cause I had to use the rest of the remaining canned pumpkin, ha!)

Applesauce Oatie Cookies

Delish! I modified a little to make a bit more healthy of a snack for my 18 mo old twins, and used 1/2 c reg flour and 1 c whole wheat flour. Used 1/2 tsp additional cinnamon, a little vanilla, about a spoon full of vanilla yogurt (I thought it looked a little dry), and left out the chocolate chips, nuts, and raisins. A keeper recipe. *edit* Just made these with a small chopped up apple (about a cup).. it is a wonderful replacement if you don't use raisins. I also added a dash or two of cloves.. these are still one of my favorites to bake :)
