Apple Orchard Punch

I made this for company over the Thanksgiving holiday. Substituted orange slices for the apple slices. It was a huge hit for all ages.

I've only made this once ... it mixed up like a charm, cooked up perfectly, but I should have added some salt as was suggested in some of the other recipes. They tasted a little bland.

Burgundy Pork Tenderloin

The gravy is definitely the best part of this ... Before putting in the oven, I substituted a packet of dry onion soup mix for the onion and half a can of cream of mushroom soup since I didn't have fresh mushrooms. I also used about 1/2 c beef broth in place of some of the wine. I had a 3-lb tenderloin and it cooked to temperature in just under an hour. It was moist and tender.

Fajita Marinade II

I added Chipotle chili powder to the marinade, left out the water and substituted olive oil for the veg. oil. It turned out pretty well -- the citrus flavors really came through, and the chili powder gave it a kick. I also added some fresh cilantro during cooking.

Chocolate Bourbon Pecan Pie

I followed the suggestion of using only about half the bourbon, suggested by some of the reviews, and this turned out great -- not quite as sticky sweet as traditional pecan pie.

Balsamic Roasted Red Potatoes

This was delicious -- the flavors blended very well for a thoroughly tasty dish without being overwhelming. I made this for a dinner party and everyone raved ... then they took home the leftovers!
