Enchiladas
These were excellent AFTER my additions. It's a good base recipe, but it needs your creativity.
I used pepper jack cheese instead, and used green enchilada sauce. I took a bunch of the recommendations of fellow reviewers:
- mixed into the ground beef - fresh cilantro, cumin, frozen chopped bell peppers, some enchilada sauce
- mixed into the enchilada sauce to pour on top - a can of turkey chile
- sprinkled on top - chopped green onions, sliced olives, extra cheese
These were "better than in a restaurant" said my BF :-)
