Easy Tilapia with Wine and Tomatoes

Not bad, but a little bland, even with fresh basil, homegrown tomatoes & extra garlic. I think I'll try some others before I make this again.

Berry Oatmeal Muffins

Delicious! Made a few small substitutions, but followed recipe pretty closely. Subbed 1 cup of whole wheat flour & 1/2 applesauce. Left out the walnuts 'cause I'm not a big fan. Also, baked for only 17 minutes. Thanks for sharing!

Blackened Salmon Fillets

Wow! This was so yummy. Like others, I substituted olive oil for the butter & didn't miss it. I broiled the filets for 5 minutes then baked at 350 for another 8 minutes. Delicious!

High Temperature Eye-of-Round Roast

So easy & so good! I felt like I was at Sunday brunch! I used a small roast (2 pounds) and just left it in the oven until hubs got home from work. Result was not as pink as I would like, but still good. I did, however, break the cardinal rule of cooking beef: I forgot to let the meat rest once it was out of the oven. My counter got most of the juices. Lesson learned & fingers crossed that the meat is still good for roast beef sandwiches tomorrow. :D

White Cheese Chicken Lasagna

Definitely rich & yummy! I made a half batch since it was just me & hubs. But, I agree that it's kinda time consuming & uses too many pans. I'll try to streamline it in the future: shredded rotisserie chicken, no boil noodles & pre-shredded cheese would cut down prep time a lot. I'd never skimp on the sauce, though. Soooooo good! The fresh spinach is a must too. I'm not usually a fan, but I couldn't even taste it.

Baked Salmon Fillets Dijon

Pretty good. I skipped the butter to save calories and omitted the salt. Still turned out pretty good. I served it w/ rice pilaf and steamed asparagus. This will be one of my go-to recipes for those busy week nights. Thanks!

Cherry Chocolate Cookies

Hubby was not impressed with these. Said I've made better. Probably just add dried cherries to my next batch of regular chocolate chip cookies. The recipe probably needs vanilla and more butter rather than sour cream to increase the flavor.

Slow Cooker Lentil and Ham Soup

Neither hubby nor I liked this very much. I followed some suggestions and used a can of stewed tomatoes instead of the tomato sauce. It wasn't too thick, it just didn't have a very distinct flavor. I couldn't taste the ham at all. Not sure if I did something wrong, but I won't be making it again to find out.

Tuna Fish Salad

I am not a fan of tuna salad, but hubby requested some. This recipe is easy, and I had everything on hand. I used dried parsley and onion powder 'cause I didn't feel like chopping up an onion. I added the mayo slowly, and had hubby taste it until he was satisfied there was enough. It ended up somewhere between 1/4 and 1/2 cup. Thanks for sharing!

Slow Cooker Latin Chicken

This was very good, but 4 hours in the slow cooker is definitely not long enough. I used dried black beans (soaked overnight) and they weren't fully cooked. Next time, I'd like to try it with bone-in chicken breasts, as I'm not a huge fan of thighs. I want to cook it up to 7 hours and add the sweet potatoes in for the last 3. Looking forward to trying it again!

Pretty good, but will be better with some adjustments next time. Didn't use corn syrup & very glad I didn't. It's too sweet as it is. I'll cut down the brown sugar next time. But, will probably make it again as I like knowing exactly what's in my condiments. :D

Cherry Pie III

I don't actually eat cherry pie, but everyone said this was great. I used the frozen roll out pie crust and doubled the filling and used bing and tart cherries like several others suggested. I got distracted and forgot to add the butter and almond extract, but nobody seemed to notice. I'm sure I'll get requests to make this again.

Big Soft Ginger Cookies

I made a triple batch of these for a cookie exchange, and they were gone instantly! I refrigerated the dough overnight which made handling much easier. They came out a little flat, but I didn't mind. Maybe using fresh baking soda will help next time. I could see increasing some of the spices, but they're also great they way they are: a little crispy on the outside, but soft & chewy on the inside! Will definitely make again.

Penne with Spicy Vodka Tomato Cream Sauce

Definitely a good departure for standard marinara sauce! I used only 2 cloves of garlic (they were HUGE), subbed turkey sausages, halved the red pepper, decreased the vodka and half & half, added some parmesan and a few slices of pancetta. NOTE: If you add parmesan & pancetta, back off on the salt. Otherwise, it was great!

Chicken Marinara

I used some homemade sauce I had frozen. I may have used too much sauce, but the chicken just tasted like tomatoes. Might try again w/ less sauce, but didn't get any rave reviews from hubby.

Rosemary Roasted Turkey

Not bad. I didn't use a whole bird, just a breast. Didn't have minced garlic, so I used a bit of garlic powder. I couldn't get the lid on my roasting pan, so I used the tented foil & took other reviewers' advice, using stock instead of water. Bird came out extremely moist. Pan drippings made great gravy.

Mashed Sweet Potatoes

Pretty good! My husband loves sweet potatoes, so I'm always looking for new ways to prepare them. I used my stand mixer to mash them and omitted the milk. I always add vanilla to my sweet potato recipes, about a teaspoon here. Used a couple teaspoons of brown sugar but forgot the cinnamon. Husband gave them thumbs up!
