Tantalizing Turkey and Blue Cheese Meatballs

these were so easy and so good! i didn't have blue cheese, so i used gorgonzola instead. also no jalopeno, so i used one whole habanero. maybe a little less olive oil next time, they were a little too wet, but still great.

Pork Enchiladas

I'm disappointed in myself for even picking this recipe out. I should've known better. The color and texture was off. The flavor was far from mexican. The tomatoes soup part really threw things off. It was also an extremely unhealth dish. I have learned a huge lesson here...

Chipotle Chicken

Loved it! I used the whole can of chipotles and the seeds! I added chopped red pepper and black beans to the rice. I used the leftovers to make a chicken enchillada with verde sauce. Fabulous!!!

Rosemary Ranch Chicken Kabobs

this was very good! i ended up having to throw the kabobs in the oven, 425 for 25 min, because we were in a tornado warning. i had cherry tomatoes, mushrooms, red pepper & red onion threaded between the chicken and served with brown rice. i can't wait to make this again, but on the grill. outstanding sauce!!!

Crustless Spinach Quiche

this was great for how easy it was. i baked them in muffin tins for 20 min on convect and made it a sandwich with wheat english muffins, mustard & hot sauce. individually wrapped and froze the leftovers.

very good. i marinated the turkey overnight, which may have been too long. i grill panned one side & finished it off in the oven. i served it with creamed spinach & steamed carrots.

not very impressed. i put the bacon on way earlier than stated and it still wasn't cooked enough. if i try this again, i will omit the bacon and just broil the cheese at the end.

Caramel Apple Pork Chops

I'd make this again. The flavors blended very well together & it was extremely easy to make. My 2 & 4 year olds ate every last bite. Always a bonus!!! I made it with steamed broccoli and next time adding cheesey mac casserole.

Fish Fillets Italiano

I served this as a soup with a side salad & garlic bread. It was a hit for the family. It could've used more flavor, but was still good & extremely easy with little clean up. I did use half green & half black olives which I liked. Next time I'll play with it a little more.

Slow Cooker Ham

Maple Salmon

very good & very easy! i didn't use garlic salt. instead i used more minced garlic & plain salt. i baked salmon with lid on for 20 minutes & with the lid off for 5 minutes, basting it in it's juices. we love salmon & this is one of our favorite ways to bake it.

Onion Chicken in Balsamic Sauce

the cooking time was way off! it should be more like 45 min at 375 degrees. i served it over brown rice. my 1 & 3 year olds loved it! i was too frustated about making sure the meat was cooked enough to enjoy. i may try again.
