Tantalizing Turkey and Blue Cheese Meatballs
these were so easy and so good! i didn't have blue cheese, so i used gorgonzola instead. also no jalopeno, so i used one whole habanero. maybe a little less olive oil next time, they were a little too wet, but still great.

Pork Enchiladas
I'm disappointed in myself for even picking this recipe out. I should've known better. The color and texture was off. The flavor was far from mexican. The tomatoes soup part really threw things off. It was also an extremely unhealth dish. I have learned a huge lesson here...

Chipotle Chicken
Loved it! I used the whole can of chipotles and the seeds! I added chopped red pepper and black beans to the rice. I used the leftovers to make a chicken enchillada with verde sauce. Fabulous!!!
