Gourmet Mushroom Risotto

Great basic recipe. You need to adjust cooking time and fluids according to type of rice used and how much liquid is released from the mushrooms after cooking them. I enjoyed this very much but my kids didn't care for it; not sure if it's the mushroom flavor or the color it gave to the rice. Check out the photo of my first attempt.

Banana Nut Bread Baked in a Jar

FANTASTIC!!!!Kids loved it in bundt cake form or muffin form. Reduced cloves by half and left out nuts for them. Stays moist for days. This is replacing my other recipe for banana cake that I've been using for years. A GREAT FIND.

Peking Pork Chops

I used 8 small skinless chicken thighs, left out the salt and pepper, and did it on the stovetop! Just left it on the lowest heat and let it simmer for an hour or so. Both my 7 and 3 yr olds enjoyed this with jasmine rice. Tastes a lot like TERIYAKI CHICKEN! Had a lot of sauce left in the pot and didn“t want to waste it; so I put four large frozen drumsticks in and turned the heat back on and let them simmer in the sauce for an hour or so. Really great flavor, even the second time around. I used Kikkoman brand soy sauce and the ketchup packets saved from various trips to McD. Reduce, Reuse, Recycle....from Curious George Soundtrack.

Japanese Cheesecake

Did triple the recipe to use up the tub of cream cheese I had (300 gr.) Added 1 tsp. vanilla extract per receipe. One cake I did in a toaster oven, two in my large convection oven. Strangely enough, the toaster oven came out best in terms of looks. The lower cake in the convection oven got water condensation droplets falling on it, ruining its looks. Both in the large oven didn't brown as nicely and I added 10 min. each in toaster oven to get the golden coloring. They didn't dry out; I suppose due to the water bath. All had wonderful flavor and texture. I think it'll look better if I made two cakes from this triple recipe. I had to stack the slices. See my photos submitted on 3/20/07

Oatmeal Raisin Cookies VII

Very nice!!! My picky kids LOVED them. I put in 1/4 cup each of margarine, butter, white sugar and brown sugar in my attempt to make this healthier. I also used whole wheat flour and added 1 tsp. of baking powder. I used rolled oats; so, without the fine powder from the quick cooking oats, I had to compensate by adding more flour to soak some fluid in order to get plump cookies instead of the flattened ones. The two versions are in my submitted photo on 3/17/07 I also let the raisins sit in hot water for 10 min. or so prior to using them in the recipe.

Hazelnut Bundt Cake

Very good. Mine came out drier than I would like; perhaps with larger eggs; worth another try because the flavor was very good. I coarsely ground the hazelnuts and chocolate together because I didn't have any chocolate chips on hand. Photo of my 1st attempt submitted on 3/17/07

Thai Chicken with Basil Stir Fry

Thoroughly enjoyed this although my kids didn't care for it. I used skinless chicken thighs and instead of the shitake mushrooms, I added an 8 oz. package of frozen wild mushrooms. Served with brown jasmine rice. Photo submitted on 3/11/07

Flax and Sunflower Seed Bread

Fantastic bread!!! Used olive oil instead of butter; I didn't have flax seeds, so I used sesame and poppy seeds and kept the sunflower seeds, making this into a 3 seeded bread. I've submitted a photo on 3/11/07; made them into dinner rolls.

Best Fried Green Tomatoes

Great breading technique. I sprinkled some of Emeril's Original Essence on some of them before serving for those who likes them spicier but they are also good with just the salt and pepper.
