Chicken Enchiladas II
This was ok but I doctored it up quite a bit. I cooked the chicken in taco seasoning, used salsa instead of milk and added a couple jalopenos to it. Still it was rather bland so we topped it with more salsa. I also doubled the recipe as many have said to do, and still only had enough filling to make 6 decent sized enchiladas. As i said we liked what I ended up with but then again, it was quite different than the recipe I started with.
