Flavorful Flounder

Good recipe, but would've been bland and not enough texture if I hadn't added Old Bay and Panko bread crumbs on top. With adjustments, I will make again.

Yum. Big hit. added chopped artichokes and a bit of parmesan and it was fantastic.

French Toast Bake

Reviewed: Dec. 25, 2011
Pretty good flavor, but I added cinnamon and more eggs and reduced the milk. I've made similar bakes before and that much milk with so few eggs is why people are having issues with it being soupy. I used fresh blueberries and raspberries on top.

Chocolate Gingerbread Men

Reviewed: Nov. 27, 2011
Good cookie, but some instructions didn't make sense. Dough rolled easier when not totally cold and didn't crack as much. Those made when cold tended to crack and fall apart. Also calls for dark brown sugar, white sugar and molasses. White sugar + molasses = brown sugar, so I don't understand the need for all 3. Flavor was very good and we had fun making them and eating them. Will tweak and retry.

Chocolate Ganache

Love this recipe - super easy and is great to dip brownie bites in or to pour over a cake. Bittersweet chocolate makes it delicious without being too sweet. Will use over and over again.

Best Brownies

Really good recipe. I use hersey's special dark cocoa. I sift all dry ingredients together except sugar so there are no lumps. Melt butter and mix in sugar and let cool a little. Beat eggs, add cooled butter/sugar and then slowly add in dry ingredients. I cut into 1 inch squares and dipped tops in Bittersweet ganache made with 9 oz. chips and 1 c. of hot cream (whipped till chips melt). Much better topping than the frosting listed.

Slow Cooker Chicken and Dumplings

Reviewed: Mar. 23, 2011
Great start. Used pressure cooker instead of slow cooker which resulted in the same tender meat. Added cumin, garlic, the onion, and the cut up biscuit dough after pressure cooking for 20 minutes. Also added bag of soup veggies for taste and texture. Used one can cream of celery and the other cream of chicken (as well as substituting chicken stock for water). Had the right amount of salt and the biscuits in the mix reminded me of the biscuits on top of my chicken pot pie recipe - but this was faster to make. My husband suggested making this a curry dish by adding appropriate spice and veggies.

Pork Tetrazzini

Reviewed: Mar. 3, 2011
Good base, but definitely would've been tasteless as written. Used egg noodles instead, added frozen chopped spinach and sliced black olives. Substituted quite a bit more pork stock for chicken stock, a splash of cream and greek yogurt in place of the sour cream. Added a lot of italian spices and garlic. Topped with the bread crumbs and parmesan. It was very good and I will make again, but without all the extra spice, the sauce would've totally fell flat (tasted it before adjusting it).

Orange-Cinnamon Chicken

Reviewed: Jan. 27, 2011
This is a good recipe. I made it tonight. I can see how some might not like the taste of the cinnamon with the chicken, but both my husband and I thought it was good. My 4 year old, who is a fairly adventurous eater (and who loves cinnamon), did not. I liked the savory/richness quality it gave to boneless skinless chicken breasts. I would make again.

Corn Fritters

Very good recipe - be careful to watch both the size of your spoonfuls and the temp of your oil or you will get raw dough in the middle. Could've used a little more salt in the dough though. Tried it sprinkled with powdered sugar and also with a little garlic salt and both were very good.

Maple Walnut Pumpkin Pie

Pretty good - made it with the suggestion of another reviewer, who makes a crust that is part graham and part AP flour. Loved the crust and the pie overall got good reviews at Thanksgiving.

Jalapeno Hot Sauce

Pretty good. I used jalapenos from my garden that had already ripened to red and it made a nice orange color. Flavor was good, but I think it might be good with a little mustard powder added as well.

Goldenrod Eggs

Just brought home eggs from the farm, so I was looking for something new to do with them. This was good, but bland for our tastes. So after tasting it, I spiced it up with a sprinkle of garlic powder and a few splashes of hot sauce and served with bacon. Made all the difference in the world.

Okra and Tomatoes

Reviewed: Aug. 5, 2010
I have never had okra other than in gumbo before buying a bunch at a farmer's market at the prompting of my 4 year old. Used fresh tomatoes instead of canned, added 4 cloves of garlic, and some "emeril essence" spice. It was good - would make it again, but definitely needed both the garlic and the extra spice of the essence (hence 4 stars versus 5). Even my adventurous 4 year old ate it.

I made this for our 4th of July BBQ and it went over well - even my sister, who doesn't really drink thought it was very tasty. I used pineapple orange juice and spiced rum.

Slow Cooker Carnitas

Reviewed: May 6, 2010
Great rub! (Based on other recipes, I added some other ingredients to the roast: oranges & Onion. Also, because I didn't have 10 hours, I roasted it in the oven for 3 hours and then pressure cooked it to get to the "fall off the bone" tenderness. Finished it off in the broiler to give it the crispiness that my favorite restaurant's carnitas has.)

Peanut Butter Eggs

I get requests for these every Easter. I don't add the coconut and use dark chocolate to ease (very slightly) how incredibly sweet they are. I also make them very small and use tempered chocolate instead of adding shortening to chocolate.
