Quick and Easy Chicken Noodle Soup

Just do what Brown Sugar Girl says to do! also, I cooked the veggies, and then threw them and all the other ingredients into a crock pot to come home to some phenomenal soup on a cold New England evening. thanks!

Pumpkin Pie Pudding

To sum other reviewers: you can substitute plain milk for the evaporated, you can cook over a stove instead of in a crock pot, and it cooks very quickly -- less than 45 minutes on the stove, and less than 4 hours in the crock. FABULOUS recipe, tastes and smells just like pumpkin pie, only easier!!!

this worked out great with pasta shapes, too. substituting sour cream since I was out of cottage cheese panned out well, too. I sauteed the veggies for some added flavor. great recipe!

Very good. added additional veggies -- red peppers, mushrooms -- and followed others' suggestions. only 1 c of cheese mixed in, none on top. 1/2 c of brown rice, but it could have used even more.

Definitely not low-fat, but it does get the kiddos to eat their veggies! Similar to others, I used "real" cheese instead of processed, and I successfully used a mish-mash of random spare vegetables from the fridge and freezer

FABULOUS! don't waste your time doing anything but making triple this recipe, it flies out of the fridge! made it exactly to recipe, except omitted the salt. I might add more cocoa powder next time. thanks!

Ham 'N' Cheese Quiche

Easy and fabulous. I used half of a fresh, chopped onion instead of the powder, and I sauteed it along with the ham so there was some carmelization adding flavor and color. Also added 1 c flour to give it extra substance (added to eggs before adding milk), and liberally added garlic powder and smoked paprika for increased depth of flavor. yum!

Kay's Spaghetti and Lasagna Sauce

FABULOUS! Save yourself some cleanup: dispense with blending the tomatoes, just go right ahead and put them in the pot after the meat has browned. I added a pound of cut-up sausage and an extra can of ground tomatoes, and this was enjoyed by kids and adults alike to great acclaim. Thanks for the recipe, this is a definite keeper!

Wow! coucous can always be counted upon for being fast and easy, but it can easily be bland. this one was fabulous, just the right amount of spicy flavor for kids and grown ups. I did add a clove of minced garlic to the chicken broth. thanks!

quite fabulous, thank you SO much for the recipe! this will be our go-to hanukkah latke recipe from now on. they stuck together fabulously, crisped up nicely (if they start to get burned instead of browned, you need to have more oil in the pan), and honestly, this is not a low-fat entree, so go ahead and use enough oil to make them come out right!!!

Mexican Bean Salad

I found that cutting back the oil and vinegar to 1/3 cup was a great compromise -- cutting back to 1/4 each as some suggest might be too dry. canned corn made for crisp salad that didn't get watered down. this definitely has some heat in it -- you may want to set some aside for the kiddos before adding in the chili powder!!

Tortilla Espanola (Spanish Tortilla)

Fabulous! Tastes just like I remember in Sanlucar de Barrameda. I definitely recommend broiling it as opposed to trying to flip it (especially with all that oil in the pan -- agreed, use a bit less oil, maybe only 1/3 cup). Broil for 10 minutes with the door closed (check earlier if your oven runs hot). Perfection! Omitting the ham and pepper did no harm (I remembered it completely plain, and that was how I wanted it!). Thanks for a great recipe!

Black-Eyed Peas 'N' Pasta

STELLAR! We used ditalini pasta so it would be the same size as the peas, and since I had no peppers, I diced up carrots instead. A little hot sauce on the table really rounded it out. Just wonderful, thanks for the recipe!

Cottage Cheese Pancakes

This recipe is quite good. The cheese taste doesn't really come through, it instead adds more of a general moistness. Be sure to at least make 50% more of the recipe at a time -- this will still result in only 8 pancakes! Also, we double the amount of flour. This could easily become our new go-to pancake recipe.
