Flan de Coco (Coconut Flan)

Very good. I liked that it had a mix of evaporated and sweetened condensed milks. I did not add sugar to the egg mixture, agreeing that the caramel sauce would add enough sweetness.

Lemon Souffle

After I removed the ramekins from the oven and waited the 5 min. cool time, they cracked and started to fall. The lemon curd I thought was essential as the souffle itself was light and boring.

Washabinaros Chili

The flavors really do blend together and mellow out. I had reduced the chilis in fear of it being hot, but should have left them in. I used 2 cans pintos as well.

DOUBLE THE RECIPE! I followed it as is and it only filled half of my 9" square - unless they are supposed to be REALLY thin. Also a little on the bland side. I'll put more dried fruit in next time.

Baklava

I read all of the tips and did make the sauce ahead of time. I added 2 t. of rosewater to the nut mixture to give it more Mideastern flavor. Unfortunately the phyllo sheets were just a tad too large for my pans and trimming after the fact was not good. So I definitely recommend that you check the phyllo to your pan to make sure it lies in nicely and trim, if necessary, BEFORE you start assembly. I've also recently seen some baklava being sold with chocolate. So I took half the pan and drizzled melted chocolate just on the top. I think too much chocolate is overpowering.

Mamool or Ma'amoul

I didn't like the dough in this version. It lacked flavor and the texture could have been better (even with the semolina). I've searched the internet and there are some others that I think the dough would accomplish that. At the point where it says to add the hot water, I would do so gradually. I added the whole cup and the dough was too soft. It also says to let the dough sit. It probably should say to put it in the frig to stiffen it. Could be a great recipe with those kind of changes.

Egyptian Rose Leaves

I was disappointed in the overall look and texture of these cookies. And you must be a fan of rosewater (or maybe I put TOO much in). Anyway, I use rosewater in my strawberry rosewater ice cream (posted on allrecipes) and love it. But maybe I like it better there because it is complimentary to the berries. Not a keeper recipe for me.

Easy Oatmeal Muffins

These were pretty good, once you spread some butter on em. LOL. I used buttermilk and added ground flax seed, some honey, and cinnamon. Next time I'll add some vanilla. Overall, not bad.

This was easy. After they dried I tossed them in granulated sugar. A tip to make the removal of the pith super easy - use a Pampered Chef grapefruit knife. You'll be done in a jiffy.

Watermelon Harvest Pie

i eat a lot of melon and thought it would be a good way to use the rind. this is definitely different and not bad. you have to like a crunchy type pie with the rind, nuts, and dried cranberries. flavor is good, just didn't care for the texture. i would chop the rind even smaller and less nuts if i made it again.

Leyley's Spicy Chicken Adobo Wings

I grew up on chicken adobo and hoped that the jalapenos would add some zip. Didn't reall. Also, I always find chicken gets pretty dried out with the excessive cooking times required. Need to find an adobo recipe that keeps the great flavor without drying out the chicken.
