Sweet Potato Souffle III

I've made this two years in a row and it's the one dish on the table that people specifically mention is really delicious. And it really is! The nut topping is to die for!

Easy Mashed Potato and Roasted Vegetable Enchiladas

This was OK. If I were to make it again I'd want it to be less heavy on mashed potatoes, and I'd leave room for a lot more cheese in each enchilada.

Chocolate Bar Fondue

Just wonderful! Made it for a friends' get-together and everyone raved about it. I didn't add the water, and it didn't seem worse for it. I used instant espresso powder.

I made some changes but I'm sure the original would still be awesome. I chopped up some pork I had and used that instead of the ground beef, added more veggies, and used cream of chicken soup because it's all I had. It was so yummy!

Peanut Butter Cookies VII

I found these to be perfectly acceptable peanut butter cookies. Not the absolute best I've ever had, but I was looking for a dairy-free recipe and this fit the bill. The cookies came out chewy and good, and I didn't have any of the moisture problems that seemed to plague some other reviewers.

Pasta with Pork and Apple Sauce

This was interesting. I used the recipe simply because I had pork chops, apples, and broccoli to use up. I used a can of tomato sauce in lieu of the sundried tomatoes. I'm not sure I'd go out of my way to make this again but given having the same ingredients on hand I'd probably make it again.

Chicken Thigh and Dumpling Stew

Oh, this is really good. I made a couple minor tweaks... I just mix the bacon right in, I skip the heavy cream entirely, and use a larger can of corn. I find that it never takes the 10 minutes the recipe says it should take for the dumplings to be done -- it's always a minimum of 20 minutes, often more. But that's OK, it's worth the wait.

Stuffed Green Peppers I

Bodacious Broccoli Salad

Slow Cooker Chicken and Dumplings

I love this recipe!! It's so good, and something different to do with chicken. And it's easy to mix it up... use different types of soup (I like to substitute one can cream or celery or one can cream of mushroom for one of the cream of chickens) and to add veggies too. I usually also add a little sage or thyme for some added flavor.

Chocolate Chip Banana Bread II

This banana bread was very, very yummy! I made one loaf and it was done cooking in the minimum time called in the recipe. I trimmed it down a bit by using 1/2 Splenda and 1/2 sugar, and using some whole wheat white flour and it didn't matter, it was incredibly good.
