No Bake Peanut Butter Pie

This is out of this world!! I followed another reviewer who made a nutter butter crust, 24 nutter butter cookies crushed & mixed with 5 T melted butter, pressed into the bottom of a pie pan. I also omitted the milk and used 8 oz cream cheese, 1 c. confectioners sugar, 3/4 tub cool whip, 1 T vanilla and 1 c peanut butter. It was AMAZING! I actually froze it and 2 days later pulled it out and was able to cut it right from the freezer. I didn't even let my piece thaw before I ate it but it would be convenient if you wanted to just store it in the freezer and thaw/serve each piece as needed. I will definitely make this again.

I threw some sweetened flaked coconut in the batter but that was the only change I made. These came out really great, nice and soft just how I like them.

Fig and Date Bread

This bread is really good. It didn't take as long to bake in my oven so it came out a teeny bit overdone but it tastes great anyway. I threw some cinnamon in with the dates and next time I might try adding allspice as well. I will definitely make this again.

Southern Sweet Potato Pie

I'm searching for the *perfect* sweet potato pie and while this one tasted pretty good, I'm sorry it just wasn't it. For one thing, it was REALLY sweet, and I love sweets, but it was almost like sweet potato candy, and I even added a little extra sweet potato when I saw how thin the batter was. The consistency was really light almost like custard and I was looking for a denser pie. I won't say it's not edible, it's just not exactly what I was looking for.

Chili Mac Casserole

I had to make dinner based only on what I had in the house so I did an ingredients search and came up with this. It turned out really good! The kids ate it right up! I used turkey instead of beef and played around with the seasonings to suit my taste, and the end result was a good home cooked meal and the best part was I had everything on hand. It was a nice change from the usual ground meat recipes that I always make. Also, for us it's going to be enough food for 2 nights' dinner, so that's a bonus.

Apple Crumb Pie

I had a 5-star apple pie recipe that I always made. Until one day I wanted to make an apple pie but only had one crust so I decided to try this recipe. This is my new favorite and the one I always make. Easier than a double crust pie too.

Manicotti Alla Romana

Wow! This was AMAZING. I used sweet Italian turkey sausage (casings removed) instead of the ground meat and used more (a large handful) fresh basil in the sauce. I put the filling in a plastic bag with the corner cut off to fill the manicotti really fast and easy. It made enough to fill a 13x9 baking dish and I had 5 left over to put in another dish, which I wrapped in plastic and tinfoil to freeze and bake at another time. The instructions on the box of manicotti said to cook it 1.5 hours at 350* from frozen so hopefully it comes out. I can't wait to have this again. It wasn't really as labor-intensive as I thought it would be, but it was well worth the effort.

Boscobel Beach Ginger Cake

This cake is wonderful, I added 1/2 tsp allspice and frosted it with allspice cream cheese frosting from this site which I already had made for another cake, I just thinned it out with milk and poured it over the cake. So delicious!

Cajun Chicken Pasta

I used sour cream instead of heavy cream and it tasted great. I did have to cook it longer to soften the peppers to my liking. I also added 2 wedges of Laughing Cow french onion cheese to the sauce which made it really creamy.

Pollo (Chicken) Fricassee from Puerto Rico

This was good, I did play around with the spices a bit to get it just right, but this was a good base. Next time I will make sure to cut my potato slices thicker, as by the time this was done cooking, the potatoes had mostly all turned to a mushy sauce. This didn't affect the taste at all, just the presentation. Taste was very good. Next time I might try with a can of diced tomatoes as other reviewers have suggested.

Chicken Tortilla Soup I

This was my first time ever trying hominy so I wasn't sure what to expect but this soup was great. I liked that mine was almost a chili-consistency since I cooked it down longer than suggested. I also added more spices (cumin, more chili powder and a packet of Sazon tropical). This was really good served with shredded cheese, avocado and cornbread.

Alfredo Sauce

This sauce was great. My cheese didn't melt all the way even though I did use shredded instead of grated, so I put it in the blender and blended it for a minute or two (before adding the parsley). That made it smoother which just looked better in my opinion. I also used 3 cloves of garlic instead of one.

Farm Macaroons

These were good, but not a traditional macaroon. They were more like coconut mirengues (sp??). They tasted good, but VERY sweet if you use sweetened coconut like I did. You might want to cut the sugar down a bit.
