My mom's cooking in Italy
About this Cook
I have been cooking with my mom since I was about 13. My mother's food is soo good, that almost everyone licks the plate clean when they are done. She cooks really healthy, and it shows with the way we look and feel. Interestingly enough, nothing we make tastes the same, even when we make the same dish. We both have our own distinct styles and while what I make is great, that is until you have hers. Both she and I cook by instinct and not usually recipes, so I joined this site to see what would happen if I followed a recipe alot of people like and for some inspiration regarding new foods.
My favorite things to cook
I love to make favorite foods healthier. I enjoy going out to eat and recreating some of the dishes at home using less oil, salt..whatever. I like to make salads, dips and salad dressing. I also enjoy cooking with chicken and fish. My guilty pleasure is cookies.
My cooking tragedies
For some reason or another, I have never been able to make rice.

Good Old Fashioned Pancakes
I always try to make things healthier when I can so I omitted the butter. I figured I would just top them with a litte Smart Balance and would coat my pan with a little of it as well. I like big pancakes, so I poured about half the batter into my pan (by accident!) and ended up with the biggest, fluffiest pancake ever! I think the first one always gets a little burnt, so be careful. It was delicious without the butter, but a little dry. I can only imagine what it would be like with it! I did add the vanilla and honestly probably a little more sugar than stated as well. :-) My advice would be to follow the directions as stated!

Chicken Breasts with Balsamic Vinegar and Garlic
If you are a onion lover like me, you can add some sliced onions to the initial stage of the recipe, where you are sauteeting your garlic. I have made this, my way, for quite an array of tastes(and personalities), and every single one of them has said it was great. I have even omitted the garlic and used a combination of onions and leeks with satisfying results, but I really think the onions and garlic is the best combination. Watch the time! This dish is best when the chicken is just done.

I think it taste better when I made it with a little big of olive oil instead of the bacon fat.
