Southwestern Pasta Salad

Easy Batter Fruit Cobbler

Not great other than the fact that any berry bake has got to be good. The 'crust' was so sugary that it was like really chewy and not like cobbler at all.

Scalloped Potatoes II

5 for presentation. I used the country hashbrowns with onions and peppers and everyone seemed to really like it. Fresh parsley is also a nice addition and I added garlic and a few other spices as others suggested

Chuck's Favorite Mac and Cheese

I used fat free cottage cheese and sour cream, didn't add the butter, but just sprinkled crumbs over the top. It was very good and my husband raved over it. I also added fresh tomatoes as others suggested.

Laura's Quick Slow Cooker Turkey Chili

I doubled the recipe and used only 1 can of soup, and used whole and chopped tomatoes with chilies as a substitute. I found the chili to have quite a kick! Maybe that was because I was a little short of beans. But it was fantastic! I also added 2 peppers for health and flavor.

Butternut and Acorn Squash Soup

I really liked the whole package of cream cheese although I did use the 1/3 fat kind. Using the whole amount of broth was fine, but it does make a less thick soup. I used less brown sugar as others did as well. I added a little bit of curry powder to give it the extra ump it needed. Great soup!

Fantastic!!!! The best brownies ever! I a little over a 1/2 c. of butter as someone said they were greasy. I would have liked 3/4 c. butter. I think I substituted about a 1/2 cup of white wheat flour (or maybe not). Wheat flours surprisingly make fabulous brownies though. The PB was to die for.

Amazing Whole Wheat Pizza Crust

Great crust! Nice and soft on the inside crispy on outside. I used a pizza stone and 1 c. whole wheat flour and the rest white wheat flour which is also a whole grain flour (try experimenting with other wonderful whole grain flours like Spelt and Oat Flour. King Arthur Flour has an amazing whole grain cookbook if you're interested).

Flavorful Chicken Rolls

My husband raved over this and would give a 5. It was good, the presentation was nice. It was harder than it describes, the cheese mixture didn't spread very well over the spinach as I predicted. I double the cheese and it did spread more evenly. It is close to cordon blue although I like cordon blue better.

Best Chocolate Chip Cookies

Good texture, as claimed. Way too much vanilla my husband and I both think. I would use only 1 - 1 1/2 t. the flavor was overwhelming. Also, I would like a little more salt. Otherwise a very fabulous recipe. I think I will try what another reviewer suggested next time and use 1 cup oat flour. Very good recipe!

Fabulous! The sun dried tomatoes with the pesto is a nice touch. I added a little chicken on the top too, but great without. One of the best recipes I have tried in a long time!!!

Mediterranean Orzo Spinach Salad

Fabulous! My husband and in-laws raved. I used about half the called for lamb and may use a little less next time although we are not big carnivores. I might also lightly rinse the meat after cooking and add the coriander later as the meat was a bit greasy. All the flavors were wonderful!!!

Coconut Tofu Keema

I did as others suggested and used less tomato sauce and more coconut milk after taste testing of course. I couldn't quite get it right. I am not sure I am crazy about this recipe. I did not have the pepper paste though so that may have been why. I used pepper flakes instead and it needed more curry too. I would give this 3 1/2 stars.

Baked Macaroni and Cheese III

Quite bland. Used much less macaroni then recipe called for and added more milk as suggested which helped. Also added more cheese. Following the original recipe would not have been a good idea. But is a good place to start from.
