Chicken Spaghetti II
I liked this basic recipe for chicken spaghetti; real easy to make if you are in a hurry. I ended up changing it up a bit though; about 1/2-3/4 can of tomatoes w/chile peppers and 8 oz. of the processed cheese was used (not a big fan of real cheesy spaghetti). I did, however, drain out all of the tomato juice from the can. I also sauteed in butter about a 1/4-1/2 c. of fresh, finely chopped mushroom, and a stalk of celery, 2 cloves garlic, and green onion tops. I think the extra ingredients really added to this recipe in a positive way. This is a fun recipe to play with.

Red Potato Soup
I liked the idea of a chicken broth base, which I used after I boiled the potatos in regular water and drained. A combination of milk and half & half was used, and also bit of bacon grease. I used a potato masher and broke up the potatos somewhat in the soup mix. I also used fresh garlic instead of powder; about 2 cloves, added one celery stalk (diced) and 4 green onions (minus the green tops, my family doesn't like onions). I served this with bacon bits and grated cheese on top. This soup was good.
