Chicken And Apple Curry

This was really yummy--though I tweaked it some. I added carrots and green pepper just to up the veggie intake, added a few cloves of garlic and also 2 Tb of mango ginger chutney. It was REALLY yummy. It still seemed really runny and I didn't want to overcook, so I added a couple TB of flour to thicken the sauce. Yummy though.

Barbecued Beef

This was REALLY good. I didn't have liquid smoke so figure it would be even better with that. I also added about 1/2 C minced onions and 3 garlic cloves instead of powder. Will be making this again!

Potato Salmon Patties

I've made these several times and everytime they've been a hit. I didn't have potato flakes on hand this time so I just omitted them but everything else was the same and they still turned out great. My kids even like them. I didn't have tarter or horseradish so I whipped up some mayo, lemon juice, seafood seasoning (or Old Bay) and worchestershire and it's a nice sauce.

Lemon Curd

This was good--extremely sweet and sour at once. It tastes like lemon meringue pie on steroids, without the crust or meringue. We found it a bit too much, like eating 4 lemonhead candies at once. I have a softer recipe which calls for a bit of flour and isn't so strong but if lemon is your thing, this would be a good recipe for you.

Bolognese on a Budget

This was pretty good--at first I thought it was a little bland but I added some red pepper flakes and it grew on me. I added extra garlic, basil, parsley and oregano and used jarred pasta sauce instead of canned tomatoes. I used WAY more water than it called for because the lentils just kept absorbing and they took about 40 min to get soft. I don't care for the firm lentils. We have vegetarian twice a week so I'm always looking for something different.

Chicken Enchiladas I

These were REALLY good--and pretty quick to make. I forgot the clove of garlic which isn't normal for me, I put garlic in EVERYTHING so I would def do that next time. I have 2 toddlers so making it spicy wasn't an option, though I did add a can of mild green chiles and some taco seasoning. I skipped the taco sauce and used enchilada sauce instead of tomato sauce and from other reviews, didn't see a need for the water. I will def use this recipe again and I like that it doesn't call for a can of soup.

Pad Thai

This was good--but def double or even triple the sauce. I tripled it and felt it was just enough, I can't imagine less, it would have been dry. I also added 2 cloves of garlic (because garlic makes everything better). We found the bean sprouts a little firm, wondering if we throw them in to cook a little earlier, if that would soften them. I would def make this again--oh and we used a lime instead of lemon. Never heard of a lemon on Pad Thai--that seems odd to me. Oh yeah, and the rice noodles you can boil for 1 min, then sit in the water for 5 min and drain. Just as good and much faster.

Apple Pie by Grandma Ople

One of the best apple pies I've made--though I did use a mixture of apples. I had a couple granny smith, a couple johnagolds and maybe one other. I suggest pouring the filling in before the lattice. I did mine after as recommended and it was a big mess. Very pretty pie though, best looking of our Thanksgiving bunch.

Very good--I've made other blue-black pies that weren't as good but I did add 1 full cup of sugar. I also made this with frozen berries but it was still very good.

Almondy Warmth Cookies

These were yummy, I did find them very greasy though--didn't even grease the cookie sheet and it was coated. I did use butter instead of margarine so not sure if that had a lot to do with it. The almonds have natural oil so I think I would cut down on the butter next time. Mine also flattened out a lot more than at least the pictured ones, this is I'm sure due to the butter. They are not cake-like at all, but more like a chocolate chip cookie consistency--a little crunchy and a little chewy. This was good and I would definitely make again.

Homemade Black Bean Veggie Burgers

Excellent recipe. I did as others before me and drained the juice from the pepper and onions and didn't have a problem with the texture. The patties were plenty sticky and our whole family loved them. I added a couple dashes cayenne in lieu of the hot sauce and it was fabulous--definitely one for the recipe file.

King Cake in a Bread Machine

This cake was awesome--so tasty...however, I didn't follow the recipe to the letter. As the norm for me, I sort of made a few twists of my own. First of all, as another reviewer mentioned it was pretty sour, I halved the sour cream and added 1/2 C milk in substitute. I also added 1/2 tsp nutmeg in the dough and did half currants and half raisins in the filling. I also baked it for 25 min because 15 didn't seem long enough and it was great. So definitely not exactly but pretty close and it was so good, I will be making this again!

Absolute Best Potato Casserole

This is very tasty, I did add a few extra ingredients like broccoli, mushrooms and ham that really added flavor. I also used real pressed garlic instead of powder. I didn't have corn flakes but it turned out great anyway--definitely one to keep on hand!

Pumpkin Cake III

This was very very good and I made it in a bundt pan. I used real pumpkin instead of canned and also substituted applesauce for some of the oil. I also added a bit of nutmeg and ground cloves and used rum icing from "Holiday Pumpkin Cake with Rum-Cream cheese icing" and that icing is awesome.

Holiday Pumpkin Cake with Rum-Cream Cheese Glaze

I actually made a different cake--pumpkin cake III which was very good but I did make this rum icing and it was fantastic! Definitely will be using the icing in the future and I'll try this recipe too--it's very similar to the other except for the self-rising flour.

Cream of Pumpkin Soup

I make pumpkin soup a lot this time of year and have tried many recipes. This is a very good recipe but I made some alterations. I peeled and added an apple instead of the brown sugar--that gave it the sweetness but also more autumn flavor and went well with the spices. I added double or triple the ginger (I just threw some in without measuring) but I would have preferred to use some fresh ginger. I used fresh pumpkin (only because I had from Halloween) and I used a can of evaporated milk instead of cream to reduce calories but still tastes great. It turned out great, even our little kids like it. Oh and I didn't even add salt, usually the chicken broth has plenty for flavor.

Lentil Soup with Lemon

This was REALLY good although I did alter it a bit and fogot a few embellishments. Going off one reviewer's option of squash, I added a small yam and pureed it with everything. Then additionally AFTER pureeing, I added 2 cooked cubed potatoes. I also added 1 Tb or so of currry. I completely forgot the lemon juice, cilantro and yogurt and my family LOVED it! I will definitely try it again with the last ingredients on top but I think the yam really added a nice, sweet flavor and we like chunky potatoes in indian food. Anyway, a definite keeper!

Raspberry and Almond Shortbread Thumbprints

These were fabulous! I actually tried 4 different flavors of jam just to see what's liked best--strawberry, blackberry, apricot and raspberry. They are all a hit! My glaze was a bit too runny I think because it mostly just pooled in the jam or ran off the sides but the almond flavor really adds. I made with my 3 year old and they were much more fun than regular cookies.

Tofu Parmigiana

Very good--but like others, I had a difficult time getting the breading to stick and stay on during frying. Others mentioned using egg before breading and I think I'll try that next time. I also sauteed onions (I add to everything) and zucchini and mushrooms just because I had them and layered those as well and it was marvelous. I will definitely make again.
