The Cuban Burger 'FRITA'
This is a good foundation of a Cuban Frita but you are missing some key ingredients... First of all, the Chorizo. Not the soft Mexican kind but the harder Spanish Chorizo. I would add in a good 1/4 lb of Chorizo. You also are missing the Papitas or fried potatoes on top. Just shred a potato, fry it until golden brown and then salt. Serve this on top of the burger with ketchup. I also increase the pimenton to a tablespoon.

Caribbean Turkey Burgers
These were very good. I used liquid Jerk seasoning because I could not find a powdered one and the jerk flavor came through nicely. I also add some egg white to my turkey burgers which really helps keep them moist. I topped these bad boys off with some Pepper Jack Cheese and some Smoked Cheddar. These are a nice healthy alternative but only real burgers get a 5 star from me.

Grilled Prawns with a Spicy Peanut-Lime Vinaigrette
I didnt marinate the shrimp. I grilled them with salt and fresh ground pepper. The sauce was enough to make you want to slap someone. We added cornstarch to thicken it up a bit, but it was really awesome. Just the right spice, balanced by the peanut butter. Great recipe!
