Chinese Cold Pasta Salad

I really felt like this one lacked flavor. I also think it needed some sort of oil or something and I tend to like things with very little fat. This one just didn't do it for me. Sorry. =(

I make these almost every Christmas Eve and they are always a hit and are never around for long. I'm not sure where I learned this, but I serve them with a mayo mustard dip. I take maybe a cup of mayonaise and just stir in maybe 1/4 (total est.) and stir it. I add the mustard in small batches until I achieve the taste I'm looking for where you can taste the mustard, but it's not overwhelming. The dip always goes over really well too. My sister likes Miracle Whip instead of mayo so we make a batch using it in place of the mayo too. Always a hit!

Homemade Chocolate Sandwich Cookies

I didn't quite love these. I think they were just way too sweet and I tend to like things sweet. If you do make them, I filled a large plastic bag with the frosting and then turned over half of them and lined them up. I then piped in a large glob of frosting on each and then used the remaining cookies to top them. I'm sure it saved a ton of time to do it this way and piping the icing was way faster than if I would have tried to scoop it in.

Easy Lemon Cookies

Delicious. The only thing I changed was to sprinkle a little powdered sugar on the tops of them after they baked because rolling them in sugar before baking didn't result in enough for my taste. I took them to our Christmas Even gathering and got rave reviews.

Blueberry French Toast

Oh my word! This is so good. It's reasonably easy to prepare, and very impressive. The blueberry sauce adds just the right touch, although the kids preferred it with regular maple syrup. We enjoyed this for our Christmas morning brunch and I will definitely make it a staple for our future Christmas brunches.

Jamie's Minestrone

Outstanding. This was really so good and so simple. I decided to add two 15 oz cans of diced tomatoes and one small can of tomato paste in place of the tomato sauce because I love tomatoes. I also chicken broth in place of the water and added 2 chicken boullion cubes. It did need a little more salt, but we're adding that when we serve instead of to the whole pot. This is so much better than even the soup they serve at the local Italian restaurant. Definitely top with fresh grated parmesan as it adds that little extra something and a little saltiness. Thanks for the post.

Banana Cream Pie III

Heavenly. I decided to use a graham cracker crust as some have suggested and it was delicious. I did do half banana cream pudding and half vanilla. I topped with fresh whipping cream (recipe: 1 cup heavy whipping cream, 3 tablespoons powdered sugar and 1/4 teaspoon vanilla. Whip all ingredients together). Thanks for the post.

Sweet, Sticky and Spicy Chicken

This was pretty good and very easy. Had everything on hand because the ingredients are pretty much staples in our home. I had 4 very large boneless/skinless chicken breasts so doubled the sauce. I did not coat my chicken in flour or add corn starch, and my sauce thickened up nicely anyway. Next time I can see myself wanting to add onions and maybe celery as it is a recipe that would take them well. I did cut the hot sauce in half as we don't like things too spicy. I served with steamed white rice and asparagus. Turned out to be a nice and satisfying meal that was super simple.

Slow Cooker Sweet and Sour Kielbasa

This was super easy and very good. Great meal on a budget. Our wal-mart sells the 1 pound kielbasa for like $2.58 and then I served over rice and a side of green beans. I think the whole thing cost maybe $4.50. Tastes delicious. I ran short on time so did everything on the stove top and just simmered for about 2 hours. I will definitely take this to pot-lucks and the like.

Honey-Garlic Glazed Meatballs

These were simply delicious. I eyeballed everything and they came out beautifully. I did follow others advice and added some garlic to my meat balls. Very easy and my family loved them. Served with white rice and veggies. Thanks for the recipe.

Baked Bar-be-que Chicken

Outstanding in flavor and in just the ease in making it. I used only chicken legs because the store had them on sale for 1/2 off. I baked for 45 minutes covered instead of 1 hour. I used a honey BBQ sauce and they turned out delicious. This will be my go to recipe when I don't have time to make dinner. I'm going to serve it with pasta and a salad. Thanks for the recipe. It's a keeper.

Kettle Corn

Wow! This is a wonderfully simple easy with awesome results. I cooked mine in a wok and didn't have a single burnt piece and almost every kernal popped. I'll never do popcorn any other way. Thanks for the wonderful recipe.

Teriyaki Sauce

This recipe is a good base, but I agree with some of the others that vinegar makes it even better. I prepared it as written, but then added 2 Tablespoons of vinegar once I tasted it. It just needed a tangy element.

Downeast Maine Pumpkin Bread

How can I not give this one 5 stars. The bread is heavenly. I added 1 tsp of vanilla as others have suggested, and cut the recipe in half and made one large loaf. I also sprinkled some chopped walnuts on top and sprinkled it with a little sugar before baking. It turned out wonderful. What a great recipe. Thanks for the post.

Sloppy Joes II

Way better than the canned stuff and took all of like 10 minutes to make start to finish. This recipe is a real winner. I followed the directions to T except for leaving out the green pepper because I knew my kids wouldn't eat them. Thanks for the great recipe. This one is a keeper.

Hawaiian-Style Meatballs

These were just okay for us. There wasn't enough sauce to really even coat them so I doubled the recipe, but we still didn't love them. With so many great meatball recipes, this isn't one that I'm likely to repeat. Sorry!

Apricot Barbecued Chicken

Definitely a keeper. This was so easy and so tasty. My daughters gave it 5 stars each too. I did follow the advice of others and double the sauce and also added a bit more apricot jam than it called for because I was looking for more of a fruity taste. Delicious. We'll be making this one again and again. Served with steamed rice and a side of broccoli.
