Enchiladas
My stepdaughter made this with flour tortillas, which we didn't really like. So I made it with corn tortillas, and it was much better. I omitted the jalapenos and substituted a small can of green chilies. I also added a small can of sliced ripe olives (drain first) to the meat mixture. But I cannot for the life of me understand how all that meat mixture will fit into only 6 tortillas! I used nearly an entire 24-count package. I also discovered that smearing the cheese mixture onto the tortilla, then adding the meat mixture, works better - gives the meat something to cling to. Seam side down in a glass 13x9 pan works well. Just be sure to spray the pan with non-stick spray first. This recipe is a keeper; we absolutely love it!

Cucumber Salad I
I don't ordinarily like cucumbers, but I love this salad! I decreased the water to 1 cup to make it a little more tart. I used rather large cucumbers, so I doubled the liquid and that worked out great. I also used flavored rice vinegar, which made a BIG difference in the taste. I plan to serve this year round. It's my new favorite! I discovered you can re-use the liquid once. If you do that, add 1/3 cup more vinegar and a sprinkle of seasoned salt. Oh, and if you use SEASONED rice vinegar it's better than wonderful!

Banana Cream Pie Made Easy
After reading the rave reviews for this recipe, I was looking forward to a tasty treat. I was disappointed. It's just an expensive and time-consuming way to make banana pudding. I'll continue to look for a good banana cream pie recipe. This one isn't it.
