Thai Peanut Chicken
Very good stir fry. Quick and easy. I like to prep the chicken in advance, and let it marinate for a half day in everything except the peanut butter. Then add the peanut butter as the final stir fry step.
I have even made several batches at the same time and put them in the freezer for home made dinner on a busy night.
