Pickled Carrot Salad
My husband and his brothers declared this to be identical to his grandmother's Copper Penny Salad, which they all loved. I made the dressing as written, but cut the carrots into rounds instead of sticks. The leftovers are quite good when used in a tossed salad; simply make a normal garden salad, then add a couple of spoonfuls of this salad for your dressing.

Cran-Orange Bran Muffins
Most bran muffins are either dry or oily, and they generally have a dense, sawdusty texture. Most also have little going for them in the way of flavor. These are tender and moist, and surprisingly light, with a pleasant orange flavor that goes beautifully with the dried cranberries. I made them using Kellog's All-Bran and, because I had no plain yogurt on hand, buttermilk. Will absolutely make again, as they were delicious. My kids even loved them!
