Cinnamon-Apple Chex(R) Mix
It's hard to stop eating this! Some recommendations: For the sauce, avoid cooking too long or it thickens too much. After 1 min. cooking, stir, then put back in the microwave for about 30 seconds, but watch and remove it when it starts to boil (15-20 seconds for me). I used a mix of rice chex and wheat chex, then pecans and sliced almonds. We didn't like the apples because they were too chewy, but cranberries were great.

Shrimp Etouffee II
Quick and filling meal! I keep the cayenne out for my kids, add in extra chopped veggies for bulk, and serve over steamed rice with fresh lemon juice squeezed over top (and I sprinkle cayenne on top for the adults). The kids love it, so do my husband and I. Plus, I appreciate that it's all microwaveable!
