Very easy to make. I sauteeded 1/2 a yellow onion (finely diced) and 1 box of mushrooms (sliced) and added it to the meat mixture before baking it. I put a layer of bacon on top to keep it moist. I did not use a pan - I made 2 free-form loaves and put them on a baking sheet wrapped with foil. This let the fat/grease run out and made the meatloaf perfect.

Easy to make and delicious. Tip: To keep these chewy overnight, be careful not to overcook them.
