Ginger Snaps IV
Overall this recipe was very good but they are definatly not ginger snaps there more like ginger cookies they are very moist and soft in the middle but they do have a nice mild taste to them. But since they were not "snaps" I ended up using a cookie cutter and made gingerbread men and using buttercream icing to decorate them so there more fun for my children.

Home-Style Scalloped Potatoes
Very good as is or, add chopped bacon or ham. I added a dash of white wine to the roux before adding the milk and it turned out great. Needs spices. I added two bayleaves, some fresh chopped rosemary and a dash of poultry seasoning. Can use half milk, half chicken broth to save on calories.

Honey Duck
Great recipe as is. But my ego is so large I always have to take credit for whatever concoction I do up in my house. I used mango/peach/orange juice, added about 4 tbsp. soya sauce and 2 cloves of garlic to the marinade. I also roasted the "innards", splashed a shot of cognac on them and boiled them in the same juice mentioned above with some onions, celery tops, bayleaves, garlic and ginger for gravy. It was absolutely fabulous. You could use white wine or scotch in a pinch.
