Holiday Left-Over Sweet Potato Cake
This turned out great! I didn't have that many sweet potatoes left over, so I halved the recipe and made it into cupcakes - these only take about 16 minutes to bake, depending on how gooey your batter is. Also, I added a lot more cinnamon - yum!

Coconut Pecan Frosting I
Really good - I followed someone else's advice and tempered by egg yolks, so I didn't have any problems with lumpiness. But after cooking it for ten minutes and adding the pecans and coconut it was way too thick, almost like taffy. Tasted good but wouldn't spread. So I just put it back on low heat and added heavy cream until it was smooth enough to spread, turned out great. I like a recipe that you can go back and fix after messing it up!

Applesauce Rum-Raisin Cake
This turned out perfectly the first time I tried it. I didn't have cocoa powder so I added extra cinnamon and nutmeg, and dusted the top with some powdered sugar. Very nice!
