I am a graduate student in nursing at UT Austin. I live in a tiny apartment with my husband, which is rapidly running out of room for my cooking utensils!
My favorite things to cook
Enchiladas! (my very favorite)
stir fry
Chicken soup
Beef stew
Vegetable soup
casseroles
Meat loaf
spaghetti
My favorite types of meals to cook can be made in less than an hour because I'm always short on time!
My favorite family cooking traditions
When I was younger, my family would make homemade pizzas together. Everyone would just pitch in and contribute cheese and toppings. Pizza is a fun dish that even a really small child can participate in.
My cooking triumphs
My enchiladas! This is a recipe my mom used to make, and I have adapted a bit to suit me and my husband's tastes. Everyone loves it!
My cooking tragedies
Alas, there have been many! They mainly stem from me misreading the recipe directions or improvising a little TOO much.
Once, wanted to make pancakes, but used a recipe for pancake mix, and then added only one recipe's worth of wet ingredients! The results resembled modeling clay!
