Cheese Enchiladas

I thought these were okay, but not outstanding. The sauce seemed too thick.

I've made this recipe several times now and it is always great. I use the following changes from other reviewers: add an extra can of soup, sub 3/4 cup milk for the mayo, make the stuffing ahead of time, and mix everything all together adding some extra cheese to the top.

Beef and Bean Chimichangas

Savory Chicken Breasts

I added a can of cream of mushroom soup and an extra slice of cheese to each chicken breast. Next time I'll also mix the breadcrumbs and melted butter together. This was very flavorful and delicious. Will definitely make it again!

Texas Beef Soup

I also added two cans of beef broth and some elbow pasta at the end. I also used frozen mixed veggies instead of canned. It was decently good, although I felt that it could use a bit more spice maybe? I may add some cayenne pepper next time. Overall, a decent soup recipe!

King Ranch Chicken Casserole III

Very good. Husband said to add it to the regular rotation. I did not add the chicken broth to the soups but soaked the tortillas in it instead. I also grilled the onion when I grilled the chicken.

Pesto Pasta

I made the recipe as is and it was completely dry. I wound up adding the whole jar of pesto (8oz) and that made it decent. It was very bland, though. My kids did like it, but DH and I found it tolerable.

Sweet Potato Casserole VI

I did reduce the sugar a bit. DH said to give this five stars so I went with his vote. It was a little too sweet for me... but I think that's how most people like their sweet potatoes!

Baked Ziti I

Very good baked ziti! Just be sure if you are a novice cooker like me to be sure and cover it while it bakes! I wouldn't have known to cover it unless I'd read some of the reviews! Will definitely make this again!

Baked Spaghetti

WOW! This is the best baked spaghetti I've ever had! Made it for my husband, mother-in-law, sister-in-law, and my two toddlers. Everyone LOVED it. We even opted to eat leftovers the next day instead of going out to eat! I made it exactly like the recipe says. Will definitely be adding this to a regular rotation. Thanks for the great recipe!
