Downeast Maine Pumpkin Bread
This is the best pumpkin bread ever. I have made it many times. I prefer less sugar than it calls for, but it's still wonderful with the full amount. I also add 1 TBS of pumpkin pie spice in addition to what it calls for. I have also substituted almost all the oil with mashed over-ripe banana's. It came out very good, but not as awesome as the original recipe. Next time maybe I will try half oil, half banana. (If you find the recipe too oily try substituting some mashed banana for the oil).
