Making Christmas Cookies all day long the day before Christmas. It's so fun to "try" one out of each batch just to make sure they taste right. :)

We've created really great fun cookies to share for school functions and my co-workers always commented on how I should "sell" my cookies. mmm. mmmm
My cooking tragedies
I taught myself how to bake and cook. Lots and lots of burned and crunchy cookies until I realized the strategy of how to slightly underbake the cookies and allow it finish cooking outside the oven!

Aunt Mary's Banana-Chocolate Chip Bread
I opted to use butter instead of shortening. I tripled the recipe but only used 1 cup sugar total, 1 cup brown sugar total, so I would recommend 1/3 cup of each for a single recipe. Also added a dash of cinnamon and NO salt. The batter was very thick. I layered the chocolate chips in the middle of the batter so they wouldn't sink to the bottom. I use a mini bundt cake baking stone, cooked @ 350 for 18 minutes. The batter didn't rise at all. The mini cakes turned out perfect and very light and flavorful. Overall it was very tastyP. Smells yummy...Bravo receipe! <3

Colorful Popcorn Balls
Just a tidbit for others, I didn't think about till after I did it. Take out the unpopped seeds before pouring on marshmallow topping! Another tip: Just keep your hands wet with a little water it's easier than wearing gloves or spraying your hands with butter. They turned out quite sticky too. Do a spritz of spray butter on the celo-wrap before wrapping, or I would recommend refrigeration before eating. They were GREAT tasting!

Mom's Baked Macaroni and Cheese
I used this recipe and baked the macaroni and cheese in cupcake liners for my son's birthday party. HUGE HIT. The kids could help themselves and throw away the wrap when they were done. I mixed the shredded cheese with the noodles and soup to make it extra cheesy, I used 1 tlbsp salt when stirring it up. I put sprinkle of cheese and pinch of bread crumbs on top of each "cupcake". They were soooo cheesey and were gone instantly! Thanks for the great receipe. It's definately a keeper in my house! The boxed stuff can stay in the cupboard from now on.
